Broccoli and Carrot Salad with Almonds

Ingredients (use vegan versions):

    1 head broccoli (can be frozen)
    2 large carrots
    1/3 cup sliced and toasted almonds
    1 tablespoon vinegar
    2 teaspoons mustard
    1 teaspoon sugar
    salt and pepper to taste

Directions:

Bring a pot of water to boil. Meanwhile slice carrots in thin coins. Throw them in boiling water and cook for 2 minutes (no longer). Remove them with skimmer and keep the water boiling.

Now add broccoli florets and cook 2 minutes (no longer). Remove and rinse with ice-cold water to stop cooking.

Now mix vegetables in a large bowl and cover with dressing made from all other ingredients - vinegar, mustard, sugar, salt and pepper. Toss in sliced almonds and serve.

Makes: 4 servings

Preparation time: 10 minutes

Keda, this salad is delicious. The only difference was that I steamed the broccoli & carrots instead of boiling them to keep the colours more vibrant.

i just made this, it was fantastic! the only differences in the salad i just whipped up is that i put cauliflower in the mix as well, i used balsamic vinegar, i steamed the veggies, and i didn't use salt or pepper. it was still delicious, though. Cheesy
