Broccoli and Carrot Salad with AlmondsIngredients (use vegan versions): 1 head broccoli (can be frozen)
2 large carrots
1/3 cup sliced and toasted almonds
1 tablespoon vinegar
2 teaspoons mustard
1 teaspoon sugar
salt and pepper to taste
Directions:Bring a pot of water to boil. Meanwhile slice carrots in thin coins. Throw them in boiling water and cook for 2 minutes (no longer). Remove them with skimmer and keep the water boiling.
Now add broccoli florets and cook 2 minutes (no longer). Remove and rinse with ice-cold water to stop cooking.
Now mix vegetables in a large bowl and cover with dressing made from all other ingredients - vinegar, mustard, sugar, salt and pepper. Toss in sliced almonds and serve.
Makes: 4 servings
