Peanut Butter and Chocolate Oatmeal

Ingredients (use vegan versions):

    1/2 cup oatmeal
    1-1 1/2 cup(s) water
    1 tablespoon maple syrup
    1/8 cup vegan chocolate chips
    1 tablespoon natural unsweetened peanut butter
    pinch of salt

Directions:

Source of recipe: me

Prepare oatmeal on the stove, in a microwave, or by adding water(however you like it).

Add maple syrup, peanut butter, and salt and stir.

Fold in chocolate chips and enjoy immediately.

I love eating something sweet everyday and this really hits the spot.

Makes: 1 serving

Preparation time: 10 minutes

This is like a warm soft scotcharoo in a bowl. I didn't have maple syrup, so I just cooked the oatmeal with brown sugar, and then soften up some peanut butter and chocolate chips on top. It was good.

I have a picture.. but my memory card isn't working. Sad

I made this for dinner the only night (I was craving something sweet Smiley ).  I didn't have maple syrup, so I mashed a banana into the oatmeal instead.  Yum!

Amazingly enough this was delicious!!! Having some for diner right now! Thumbs Up
I used unsweetened almond milk & agave for the sweetener....will def. make this again, thanks for sharing this one~

This was really hard for me to consume when I made it yesterday morning.  It was too sweet for my taste, and I felt so bad that I had to waste some of my precious oatmeal!  Today I will definitely go back to my normal of brown sugar, flax and raisins!

This is an adaptation of a recipe that I often make, though not usually for breakfast. My bf and I joke that it's a no-bake cookie in a bowl! I don't usually add the extra syrup--the chocolate chips are sweet enough. I also add the pb and chips to oat bran and Scottish/Steel cut oats. Delish as a brunch or a healthier option dessert!
