Delicious Fresh Peaches Pie w/ Rich Crust

Ingredients (use vegan versions):

    Crust:
    2 cups flour
    1/2 teaspoon salt
    3/4 cup 2 tablespoon butter, chilled and sliced
    2 teaspoons sugar
    1/4 cup ice cold water
    Filling:
    1 cup sugar
    1 fresh peach pureed
    1/2 cup water
    1 teaspoon lemon juice
    2 tablespoons vegan butter
    2 tablespoon cornstarch
    4-5 fresh sliced peaches

Directions:

Crust (2 layer):

In a large bowl, combine flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Separate into 2 balls.  Wrap in plastic and refrigerate for 4 hours, overnight, or in the freezer for 30 min.

Roll one dough ball out to fit a 9 inch pie plate. Place crust in pie plate.  Press the dough evenly into the bottom and sides of the pie plate. Roll out the other dough ball for the top crust layer, and set aside.

Filling Directions:

Combine sugar, water, cornstarch, butter, pureed peaches in a saucepan.  Add cinnamon and nutmeg if you want extra flavor. Cook over medium heat until it butter is melted and is slightly thick.  Fill pie shell with filling.

Place other crust layer, that was put aside, on top. Poke a few holes in the top.

Bake for 40-45 minutes at 350 or until top is golden.

Serves: 8

Preparation time: 1 hour

i used a different pie crust but this filling is AMAZING. i used 1 fresh peach for the puree because thats all i had then i used a jar of peaches for the rest. i used less then a half cup of sugar because the jar peaches were already sweet. this is soo good i cant stop eating. i made it for my husband i just hope there is some left when he gets home.
