Banana Pancakes

Ingredients (use vegan versions):

    1 cup flour
    2 teaspoons baking powder
    1 ripe banana, mashed
    1 1/4 soy milk (vanilla or regular)
    cinnamon (I like about 1/2 teaspoon at least)
    fruit or maple syrup (garnish)

Directions:

Sift together baking powder and flour. In a separate bowl, mix the mashed banana with 1/2 cup of the soy milk until there are no lumps. Add to baking powder and flour and add remaining ingredients.

Stir together until "just mixed".

Bake pancakes in a lightly oiled frying pan until golden brown.

Garnish with fruit and/or maple syrup. Enjoy!

Serves: 2

Preparation time: 15 minutes

this was a good, easy recipe. after reading keda's review,  i added some shredded coconut.  they're not overly sweet, which i liked.  i had mine with earth balance and my husband had his with strawberry syrup.

These are AWESOME!  Absolutely the quickest, easiest pancake recipe ever.  Extra points for only using a few ingredients!
So, so fluffy and good.  This is my new pancake recipe! Love it.
