Take My Breath Away Burgers

Ingredients (use vegan versions):

    2 cups uncooked black-eyed peas (or 4 cups cooked beans of choice)
    1 onion, diced
    4 large garlic cloves, grated
    1 fresh jalapeno, seeded and chopped (or 3 tablespoon pickled jalapeno)
    2 tablespoons pureed chipotle peppers
    2 tablespoons hot mustard (or regular if preferred)
    1 tablespoon Braggs or tamari/soy sauce
    2 carrots, grated
    1 1/2 cups corn
    1 teaspoon each chili powder, cumin, paprika, pepper
    1 cups oats
    1/4 cup toasted wheat germ
    1/4 cup flour (if needed)

Directions:

A freak burger experiment gone wonderfully spicy.

1. Soak beans overnight or use quick soak method and then cook well. Mash up in a large bowl.

2. Sauté onion, jalapeno, garlic, and carrot in a little oil or the Braggs.  Add sauté mixture to mashed beans and stir in spices, mustard, and chipotle puree (I like to add a few dashes of habanero hot sauce, but somehow I don't think everyone shares my love for extremely spicy food).

3. Mix in oats and wheat germ. May need flour if it cannot be formed into patties.  4. Form into patties, grill on grill machine or roll in flour and grill in a frying pan. Freeze leftovers.

Marvelous topping suggestions:  Avocado, red onion, tomato, spinach, and vegan nayo mixed with some chipotle/chili sauce.

Serves: About 12-15 moderate patties

Preparation time: quite a while

Isn't there anyone brave enough to try these out there in Vegweb? They're really good!  Thumbs Up  Ive been feeding them to my non-veg friends and they say they're better than the alternative! If you don't like the work of beans from scratch, use 2 cans of any beans of choice. Live a little - Try my burgers! Extra Cool

Ok, I made these and they are very good.  I didn't make the full amount of peas but did use just as much veggie.  I added extra mustard to it because we are mustard fiends.  It's almost like a New Orleans kind of burger, at least I felt like it, like a bayou burger. Very yummy.

Really, REALLY good.  I only made half a batch (6 burgers, because I had 6 buns).  I would maybe recommend using quick oats or grinding the oats before using, because my whole rolled oats took a while to absorb enough moisture to work as a binder.  Next time I might put the mixture through my food processor too, because the pieces of corn and onion made them a little hard to form into patties.  The flavor was excellent though...probably the best veggie burger I've ever had.  Thumbs Up
