Outstanding Cheezy Potato Bake

Ingredients (use vegan versions):

    about 6 small-medium red potatoes
    1/2-1 yellow onion
    oil for bottom of dish
    Earth Balance or other vegan buttery spread
    lots of salt and pepper
    about 1/2 cup nutritional yeast
    soymilk
    water

Directions:

I'm sorry I don't have better measurements, but I just threw this together for dinner, and it turned out FABULOUSLY! You can use any type of potato, but I used red.

Preheat the oven to 450. Prepare a casserole dish (I used an 8x8 glass pyrex) with oil to cover the bottom. Set aside.

Wash and slice your potatoes into ~1/2 inch rounds, and slice your onion. Add one layer of potatoes to the bottom of the dish (I used 2 potatoes per layer, for 3 layers). Add some sliced onions to the top of the potatoes, season with lots of salt and pepper, and add a few dollops of EB on top of the layer.

Add the nutritional yeast to a bowl, and pour in enough soymilk or water (I used a mixture) to make a sauce (medium thinness). Season this with salt and pepper. Pour some of the sauce over the first layer, but remember you need enough for 3 layers.

Continue to layer the dish with potato, onion, s, p, EB, and cheezy sauce. You should have enough sauce to pour some on top. I recommend lots of onions on top because they brown so beautifully. Make sure you season with enough salt and pepper!

Pour some soymilk in the dish to about 1/2 up. You want a nice sauce! Bake for 45 minutes-1 hour (until the potatoes are very tender, and the sauce is bubbling).

Honestly, we could not tell any difference between this and the au gratin potatoes of our past.

Serves: Served 2 for us, several for normal people

Preparation time: about 1 hour

I did uncovered the whole time. I thought about covering it...then I decided to do uncovered, check on it, and maybe cover it if I thought it needed it. But, I never did, and I really like how the top onions got browned/blackened. I'm sure it would do just as well covered for part of the time, though.  Smiley

I made this today for lunch (instead of studying like I should've been doing...)-- SO delicious! I had to modify the recipe because I only had one potato, but it still turned out perfectly. Thank you, I've been craving au gratin potatoes for a while!

This was absolutely outstanding!  I followed the recipe exactly (rare) and these came out great!  I put lots of onions on top and baked, uncovered, for about an hour.  My fiance actually called them "da bomb"... I keep trying to tell him no one says that anymore, but it's not getting through...

Anyway, this is an awesome recipe, thank you sooooo much! Try it!!!  Smitten

This came out awesome!
The meat eater even loved them.
Only change I made was add some smoked paprika (My new fav) to the salt and pepper for each layer.

This was yummy. I also forgot to layer the sauce but it seemed to seep through just fine. I did overcook mine a bit, but it was still delicious. In fact, I caught my husband scraping the pan!  Thumbs Up

this was so good that I could have ate the whole pan for dinner last night!!   I added a green pepper and it reminded me of augratin(sp?) potatoes that my mom used to make.  AC,I want you to become my personal chef!!!!!

I used to absolutey HATE augratin potatoes when my mom made them. THey tasted like throw up to me (literally). Do you think I will like these considering that? Do they have that barfy taste? 
I like a  lot of vegan versions of things I used to hate, so I guess I just need to try it...will review soon!
