Soyrizo Mac'n'Cheez-o

Ingredients (use vegan versions):

1 package Soyrizo (it's about 2 cup faux chorizo)
1 box (1 lb) spiral pasta (or other fun shape)
    1/2 onion
1 cup corn (frozen works great!)
    1-2 tablespoons oil
1 can (14 oz) diced tomatos in juice (can be "flavored" if that is what you have)
    2 cup water
    1/4 cup nutritional yeast
1 tablespoon EACH garlic powder and onion powder
    3 tablespoons flour
1 tablespoon (nice pat) of vegan buttery spread

Directions:

Start by boiling a big pot of water to cook all the noodles. While you wait for the water to boil, you can work on the other parts of the recipe. Once the water is boiling, cook pasta until done, about 7-10 minutes depending on type.

Meanwhile, make the cheeze sauce. Add water, onion and garlic powders, buttery spread, nutritional yeast, and flour to a blender and mix well. I guess you can do this in a bowl, but I like using my blender Smiley

After the sauce is ready, heat a LARGE!!  (you want all this food to fit in-- i used a 15' cast iron pan!) skillet. Add oil and onions and cook onions until softened. Add soyrizo and stir around until hot. Add tomatoes, corn, and cheeze sauce mix. Stir well and simmer 5 or so minutes until the sauce thickens slightly.

At this point the past should be done.  Or overdone if you cook slowly-- watch out! Drain the pasta and then carefully mix it all into the soyrizo-cheeze mix in the skillet. If you used a pan that won't fit it all, you can change out pots if you need to. Heat a little bit longer to let the flavors mix together.

Serve with some salsa, tofu sour creme, or avocado slices. Yum!

**Note: I don't add salt to most of my cooking. You might want to try a little and see if you would like some salt in this or other seasonings. The cheeze/tomatoes really help mellow out the soyrizo, so it isn't as spicy as it normally is when it is more "concentrated" in a dish.

Serves: 6-8 (a LOT)

Preparation time: less than 30 minutes

Thumbs Up  Since by some fluke alignment of stars I actually had all the ingredients and gave it a try.    I did have to add salt for the boyfriend and tumeric for me. I really liked it, fast, easy and filling.

Very good stuff.  I was actually browsing around for a breakfast recipe this morning when this one caught my eye.  I knew I had a package of Soyrizo to use up, so I decided to try this for lunch, and I'm glad I did.  I followed the recipe, except that I left out the onion powder as I didn't have any, and I added more nooch because I love it.  It's just a tad too spicy for pasta, even with the cheese sauce mixed in, which is why I gave it 4 stars instead of 5, but I didn't have any sour cream or guac to add in, so that might have damped down the spiciness a bit.  Definitely worth trying if you like Soyrizo or spicy pasta dishes.

I'm so glad this is what I made with my soyrizo! It is so yummy. I used veggie shells, sauteed my onion, and just warmed the soyrizo (instead of letting it get browned). I forgot the EB in my sauce, but I don't think I miss it. I added a bit of chunky tomato sauce, and no corn. Garlic salt instead of powder. Mmmm.

This came out awesome. I did have to add a  pinch of salt, but otherwise, nice inexpensive and tasty meal.  I hope my children enjoy it as much as I did. Thanks for the recipe> Thumbs Up

Oh my gosh! I cannot thank you enough for this recipe. My 7 year old is a picky guy and I thought you'd like to know what he had to say about your recipe. "Whoever is the maker of this recipe, that person should be president of the United States!" he exclaims. I thought that his exclamation was too cute. You'd have to know him, but if he was that impressed you really need some sort of prize. Hats off to you and thanks again!  Thumbs Up

Oh my gosh.  Soyrizo + Mac & Cheese = Heaven!  This was so good!  I used Trader Joe's Soyrizo, which is AWESOME and skipped the tomatoes since I didn't have any.  This was excellent and so easy!  Thanks.  =)

I made this for the 2nd time last night and it reigned supreme both times!
I love it.
I used elbows the 2nd time around and 1 lb seemed like to much so I used about .5 lb and it was perfection.
this recipe rocks harder than eddie van halen!

I made this today for lunch, and it was tasty.  It's very much like chili mac, although I usually have beans in my chili mac.  The cheesy flavor in this dish is subtle; if you want more cheesy flavor, I suggest adding more nutritional yeast.  I used cellentani for the pasta and fire-roasted canned tomatoes for the regular canned tomatoes.  I didn't use the entire pound of pasta, more like 12 ounces or so, since I wanted it to be on the saucy side.  I now have a bunch of leftovers for the week, and I look forward to eating them.

I just made this again today and it's awesome! Super easy...I  didn't use any tomatoes, and it's still delicious. I just made my basic go-to mac and cheese and added soyrizo.   Smiley

I have made this twice now, and it seems to get better each time!  The only variation that I make on this recipe is I add green pepper and double the cheeze sauce.  SO GOOD!  This is seriously one of my favorite recipes on this site!  It's quick, easy, not too expensive, and delicious.  YUM, I can't wait to eat it again already!
