Portobello Cheese-Steaks

Ingredients (use vegan versions):

2-3 large portobello caps, thinly sliced
2 cups fresh spinach, shredded or 1/2 pkg. frozen spinach (thawed)
    1 clove garlic
    1/2 medium onion, sliced
    1-2 tablespoons vinegar
    1 teaspoon vegan Worcestershire sauce
    1 teaspoon soy sauce
    1/2 teaspoon Italian spices
soy feta cheese or other soy cheese
cibatta or focaccia rolls or other hoagie rolls
salt and pepper to taste (approx 1/2 teaspoon of each)

Directions:

Slice onion thinly and sauté a few min.  Slice portobello thinly (food processor) and add to onion.  Add garlic and spinach.  Sauté a few more minutes stirring constantly.  Add vinegar, W.  sauce, soy, and spices.  Add salt and pepper to taste.  Continue cooking and stirring occasionally over medium heat for approximately 25 min. or until all flavors have blended and mushrooms have a thin flimsy appearance.  Slice rolls and toast briefly under broiler.  With rolls still on broiler pan, top both halves of each roll with mushroom mixture and top with cheese.  Broil until cheese melts and edges of bread are a little crispy.  Great with fries!  Not exactly philly-style  but reminiscent.

Serves: 2

Preparation time: 30 minutes

I modified the recipe by omitting the spinach (spinach and "steak" sounded weird to me).  I also didn't slice the portobello mushroom up; I left it whole as one big "steak".  Next time I'll make more sauce to serve once everything was cooked.
