Squashed Potatoes

Ingredients (use vegan versions):

    4 potatoes, peeled
    1/2 butternut squash
    vegan butter
    salt and pepper to taste
    soy milk

Directions:

Slice squash in half, place skin down on baking tray, bake at 350 for 45 minutes.

Peel potatoes, cut in half, boil in salted water for 15 minutes. Drain.

Let squash cool, gut out the seeds, peel off skin.

Combine potatoes and squash in a large bowl, add lots of butter, salt and pepper, and a bit of soy milk. Mash mash mash!

Serve hot.

Serves: 4

Preparation time: 15 for prep, 1 hour for cooking

This is some yummy stuff.
I used two regular baking taters and one huge sweet potato, and I actually peeled my potatoes for a change! I usually like bits of potato skins in my mashed taters, but this recipe is great without them.
I wasn't sure about adding "lots" of butter, so I just used about 3 Tablespoons of Earth Balance, and it was just right. I also ate mine with a bit of paprika sprinkled on top...mmm!
This is a great way to use up a dinky little "what-the-heck-am-I-gonna-do-with-this tiny butternut squash?" that's been sitting on the counter for weeks, taunting You with it's many potential uses. I will definitely keep buying butternut squashes just to make this recipe again.
