This is some yummy stuff.
I used two regular baking taters and one huge sweet potato, and I actually peeled my potatoes for a change! I usually like bits of potato skins in my mashed taters, but this recipe is great without them.
I wasn't sure about adding "lots" of butter, so I just used about 3 Tablespoons of Earth Balance, and it was just right. I also ate mine with a bit of paprika sprinkled on top...mmm!
This is a great way to use up a dinky little "what-the-heck-am-I-gonna-do-with-this tiny butternut squash?" that's been sitting on the counter for weeks, taunting You with it's many potential uses. I will definitely keep buying butternut squashes just to make this recipe again.
