Whole Wheat and Spelt Bread

What you need: 

4 cups whole wheat flour
3 cups light spelt flour
2/3 cup maple syrup
2 packages active dry yeast
3 cups warm water
1 tablespoon salt
3 tablespoon olive oil

What you do: 

combine the yeast, water and 1/3 cup of the maple syrup in a large bowl. add four cups of whole wheat flour and one cup of spelt, mix thoroughly and let sit until it gets big and bubbly (about 30 minutes). Add the remaining maple syrup, salt, and oil. Mix. Stir in the remaining 2 cups of spelt flour. Tip out onto a surface floured with whole wheat. Knead until it no longer sticks to the counter but is still sticky to the touch (3-5 minutes). Put into an oiled bowl, flip once to oil the dough. Cover with a tea towel and let rise until doubled.
Heat oven to 350 F. Shape the dough into three even, oblong loaves on baking sheets. Let rise another 15 minutes. bake for 30 or so minutes.
