Chanterelle SauceIngredients (use vegan versions): 3.5 oz chanterelle mushrooms
1 small shallot, chopped
1 small garlic clove, minced
1/2 cup plain soymilk
1 tablespoon flour
1 tablespoon oil or margarine
salt, pepper and cumin to taste
few drops of vinegar
Directions:Wash your mushrooms and tear them in long pieces (imagine string cheese). Heat oil or margarine in a skillet. Sautee onions and garlic for a few minutes, add mushrooms and wait until they release their juices and absorb them back in. Add spices and vinegar. Mix flour and milk, pour it over and stir until it thickens. Serve over mashed potatoes.
