Baked Bell Pepper And Corn SaladIngredients (use vegan versions): 4 medium bell peppers in various colors
1 medium onion
1 can of corn
1 garlic clove
1 tablespoon oil
1 tablespoon balsamic vinegar
thyme, oregano
salt, pepper
Directions:Preheat oven to 390F.
Slice your vegetables into thin strips.
Chop garlic.
Put everything except corn in a loaf pan covered with oil. Bake in oven for 10 minutes, stir, and bake 10 more minutes.
Now mix in the corn and chill or eat warm. If you like it hot, add chili.
