Dark and Fabulous Pudding

Ingredients (use vegan versions):

    1 cup + 2 tablespoons sugar
    1/2 cup baking cocoa
    1/4 cup flour
    2 1/2 cups soymilk
    1 tablespoon vanilla extract
    pinch o' salt

Directions:

1) In a saucepan, stir together the sugar, cocoa, and flour.

2) Add soymilk; stir until smooth.

3) Cook over medium heat, stirring constantly, until the mixture comes to a boil.  Continue stirring and cook until thick, about a minute.

4) Remove from heat.  Stir in vanilla and pinch of salt.

5) Let pudding cool to room temperature, stirring several times.

Serves: 4-6

Preparation time: 20 minutes

This is good, VS! It's really freaking rich, but that's probably a good thing (can't eat too much). It's a lot of sugar...but I went with it. A good treat!

I have a long history of lumpy puddings.  They've all been cornstarch based, too.  This recipe reintroduced me to my love of pudding- my first successful pudding batch in 8 years of veganism!

I've made this twice this week, so I had to give it my 5 stars and a great review.  I add a little less sugar, because I don't like desserts too sweet, and I've thrown different flavors in with equal success- 1/4 tsp orange rind + 1 tbsp triple sec for orange chocolate, 1 tsp almond extract + 1 tsp rum flavor (or 1 tbsp rum) with a sprinkling of toasted coconut flakes for coconut rum chocolate... I can think of so many more things to add!!! This recipe is totally adaptable, totally easy to make, and has taken my eyes off of my husband's candy bar stash  Thumbs Up

I brought this pudding to a party last night as a vegan alternative to whipped cream for dipping fruit in and it was definitely a success. It is so yummy with bananas and strawberries (and would be great with raspberries too!). Lots of non-vegans loved its chocolaty goodness, and I saved some for myself for later! It is very rich, but that's why its great for fruit because you actually don't eat that much of it (though I was dipping my finger in too!) I'd never made pudding of any kind before, and this recipe was easy and fun. I like stirring it over the stove and watching it gradually thicken. O, I also used half soymilk and half almond milk (because I ran out of soymilk) and it still turned out great, so I think you could probably use any kind of non-dairy milk for this recipe. Whatever you have on hand.

This pudding was really great, but maybe a bit too overbearing in sweetness! We decided to add a banana to the mix too. I think next time we will use less sugar.
Still gets my vote though!  Thumbs Up
