Kickin' Gingered Cranberry SauceIngredients (use vegan versions): 1 bag fresh (or frozen) cranberries, well washed and rinsed
3/4 cup granulated cane juice, fructose or just plain ol' sugar
tiny (really tiny!) pinch of sea salt
1-1 1/4 cup liquid, mixture of 1/2 cranberry cocktail and 1/2 cold water
2 teaspoon orange zest, preferably from organic orange
1 teaspoon lime zest, ditto
1/2 cup lightly toasted walnuts, chopped
1/4 cup minced crystallized ginger
Directions:1. Place berries and sweetener of your choice in 2 qt. saucepan.
2. Add liquid and slowly bring to a boil. Add tiny pinch of salt and boil gently (bubbles just breaking the surface) until liquid is incorporated and berries are bursting, about 10-12 minutes. Remove from heat and let cool to room temp.
3. Add orange and lime zest.
4. Add walnuts and minced ginger, reserving a few for the top. Mix well to incorporate.
5. Sprinkle reserved walnuts and ginger over the top. Chill for at least 2 hours. Can also bring to room temp before serving.
This is not only for holiday meals. It's great with any tofu, tempeh or seitan entree.
