These are absolutely AMAZING - and so easy to make. All my friends loved them! My omni brother who shuns vegan food on principle was begging for me to make these again. Weirdly, I also forgot the baking powder the first time I made these, but even then they were good. I used one egg's worth of egg replacer because I didn't have any flax seed, and that worked out perfectly.

So much win!

Hey, I just tried these brownies and they are very good!!! This is first time I am making brownies! I followed the recipe: added baking powder and all other ingredients. I also added some walnuts. I only added sugar to water and oil and let it melt before mixing with dry ingredients :-)

This brownie gets high marks for rich flavor, chewy texture and simplicity. The brownies were fudgey little squares, slightly crispy on top, chewy middles, and studded with walnut bits. I did hope for a slightly thicker brownie, although rich chocolate flavor was packed into the thinner squares.

For my first time using this recipe I was very happy with the results. I reviewed the suggestions, and based on them, went with the following modified recipe:

    1 cup sugar
    1/3 cup soy milk
1 Ener-G egg (1 1/2 teaspoons Ener-G egg replacer powder beat with 2 Tablespoons warm water until frothy)
    3 Tablespoons vegetable oil
    1 Tablespoon applesauce
    1/2 teaspoon vanilla
    1 cup unbleached flour
    1/3 cup unsweetened cocoa powder
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup chocolate chips
    1/4 cup chopped walnuts

Directions:
Preheat oven to 350 degrees. Oil an 8"x8" baking pan and sprinkle bottom with a little cocoa powder.

In large bowl, whisk together sugar and soy milk. Mix in Ener-G egg, oil and apple sauce.

In smaller bowl, mix flour, cocoa powder, baking powder and salt. Gradually add to dry ingredients. Whisk until ingredients are just incorporated. Don't overmix. Fold in chocolate chips.

Using a rubber spatula, evenly distribute brownie batter into oiled pan. Sprinkle top with walnut bits.

Bake for about 25 minutes. Let cool and cut into squares.

Makes 16 squares.

Thank you for that. I didn't think about that. Let me take one more stab at the recipe before I post. I've been studying brownie recipes and techniques, although not as obsessively as chocolate chip cookies, to see if I can get it just right.

I made these and added vegan chocolate chips. They were really good, but I almost went into a diabetic coma afterwards. For some reason every time I make something Chocolaty it turns out too sweet . Guess Ill have to stick to cookies and stuff.

Just made these tonight, and they aren't bad. I think they needed a bit more liquid. The only thing I changed was I only had vegetable oil on hand, so I used that instead of the canola oil, and I added in some mini m&ms. I find they have a bit of a powdery aftertaste, so I think next time I will definitely add a bit more water. Oh, and I had to double the recipe in order to fill a 9x9-inch pan. They still taste very good, and they are in fact gooey with a "crusty" top. Will probably make these again Smiley

I finally tried these. They are the closest I have come to brownies that taste like brownies and NOT chocolate cake! They are so gooey, that is not a bad thing, but they are not pretty when cut. They definitely improve taste and texture wise when cool. They are yummy and easy, will make again. Thanks

These are the first vegan brownies I ever made and they're really good! They taste just like normal brownies. My omni dad loves them.

I did 1/8 cup oil and 1/8 cup applesauce, and the only problem I had was that when I mixed the wet ingredients with the dry, it was too dry so I kept adding 1 TBS of water at a time until they got moist enough to bake. Then I put a piece of tinfoil over a glass pan, sprayed it and baked them. I saw other people said they were sticky and hard to get out of the pan, so if that's you're problem, then try putting tinfoil in the pan because mine weren't sticky at all! I would definitely make these again.

These are REALLY good.  I just added 1/4 cup soymilk (because of dryness) and 1 cup chocolate chips.  Put in 8 X 8 glass dish for 30 minutes.

I made these tonight, and they were the best brownies that I have ever eaten!  Smitten The only thing I did differently is when they were done, I put chocolate syrup on them when they were still hot and the brownies soaked them up a little, then I sprinkled powdered sugar on them. I shared them with people and they loved them. Even the nonvegans.  Wink

Thanks for the recipe! Thumbs Up

Oh, I forgot; I didn't have flax seed, so I replaced it with corn starch.

This recipe rocks!!  I added coconut flakes , choc chipps and pb chips. TOO DIE FOR! I also added alittle splash more water. I read a question about sticking to the pan, I suggest always using parchment paper.  Thanks !!!

Mmm! These turned out great.  I used a non-stick pan that I also greased and I had no problem removing them from the pan. I used Ener-G egg replacer, added 1/4 cup of choc chips, and baked them for 20 minutes. I think they could have used another 3-5 minutes because they were very soft. I liked them that way but it made them a little difficult to serve.  I also drizzled some caramel on top (I melted equal parts margarine and brown sugar together), which added a nice touch.  My sister said the first one she ate didn't taste quite sweet enough but she changed her mind by her 5th one Smiley
