Sweet & Savory Sweet Potato SaladIngredients (use vegan versions): 1 sweet potato (yam), diced with skin on
2 tablespoons Dijon Veganaise
1 1/2 tablespoons pickle juice
1 tablespoon minced purple onion
1 tablespoon garlic chives, minced
1 grind sea salt
1 grind black pepper
Directions:Boil sweet potato until tender. Drain.
Mix with Dijon Veganaise, pickle juice, purple onion, garlic chives, sea salt and pepper.
Smoosh potatoes as much as desired to consistency enjoyed.
Feel free to experiment with adding different herbs or spices. This was done on a whim, and I'm sure that it can be improved!!
