Fluffy Coconut Walnut Pancakes

Ingredients (use vegan versions):

    3/4 cup flour
    2 teaspoon baking powder
    1/4 teaspoon salt
    1/3 cup shredded coconut, sweetened recommended
    1/4 cup chopped walnuts
    1 and 1/8 cup soy milk, vanilla recommended

Directions:

In a medium sized bowl, mix the flour, baking powder, salt, coconut, and walnuts. Pour milk into flour mixture and gently stir together until just mixed. Pour batter into a hot, non-stick pan on medium heat and let sit until the center starts to bubble and become sturdy. Flip pancake over and cook other side until golden brown. Repeat until batter is gone.

Can make 2 large or 4 small pancakes.

Serves: 2

Preparation time: 5-8 minutes

This recipe worked really well.
I added 2 tsp sugar, but it didn't really need it.
I used plain soy milk and added vanilla extract.

Gonna make this again next weekend! :]

This was really good. I made a double batch with unsweetened coconut (no sugar added either) and chocolate chips instead of the walnuts (had none and was craving chocolate). Turned out very yummy. Thanks. Smitten

Oh MAN!!!  I tried these yesterday morning because I had very few groceries in the house, but I had all the ingredients to make these.  They were so good that even though I went shopping yesterday I'm still going to make them again this morning.  thanks so much for posting!   Cheesy

My husband made these 5 minutes ago, and they were delicious! I personally don't like nuts in baking, so I won't put them in when I make this, but overall GREAT!

These are great! I actually quadrupled this batch so I could freeze a bunch in preparation for when my classes start and I have no time to cook. (Pancakes are a great make-in-bulk-and-freeze-for-later food. Freeze them separately on a baking sheet so they don't stick together, then package them all so they don't get freezerburned. Early in the morning, pop one in a toaster oven or toaster until warm, and yummy! Excellent pancakes super fast.
