Classic Blondies (vegan version)

Ingredients (use vegan versions):

    1 cup flour
    1 teaspoon baking powder
    3/4 cup walnuts, coarsely chopped (optional)
    3/4 cup chips, vegan chocolate or vegan white chocolate (or both ; ))
    ----------
    1 cup brown sugar, packed
    6 tablespoons vegan margarine
    1/4 cup vegan mayonnaise (e.g., Vegenaise)
    2 teaspoons soy milk   
    2 teaspoons vanilla extract
   

Directions:

Inspired by ChefLindsay, kudos!

Pre-heat oven to 350 degrees F.  grease, well, a 8x8" baking pan.  mix together flour and baking powder (if using nuts or chips, mix in now).

In a medium sauce pan, melt margarine and sugar, whisk until combined well.  mix in soy, vegan mayo, and vanilla, and whisk well.

Then, continue mixing warm mixture until it cools (if you can stand to put your finger, its cool enough) then slowly add the dry mixture, whisk until smooth.

Pour evenly into pan. Bake for about 35 minuets, or until a skewer comes out clean.

Allow the blondies to cool completely before cutting (the fridge speeds up the process).  enjoy!

Serves: (depends on your appetite! or) 8

Preparation time: 10 min. (prep.) 35 min. (cook)

Marycat, the vegan mayo is a must; its the main source of moisture and the vinegar in it acts as a rising agent...
but the up side is... i make my own vegan mayo... the store bought kind is just to expensive... i hope this helps:
Amanda's Vegan Mayo
2 1/2 c. veggie oil
1c. soymilk
1tbsp maple syrup
3/4tsp salt
2 1/2tsp apple cider vinegar
1/2tsp mustard                               
>>>Blend all ingredients, except vinegar, on high in a blender or food processor. when mix is smooth, add vinegar and blend again, until mayo thickens.

i assume you can try soyyoghrt or creamed tofu, with a splash of vinegar, but the lack of oil might not keep the blondies together...

I'm sorry but these were not very good and I have made some excellent vegan desserts.  I was worried to start because the batter looked to dark to be blondie batter.  The cooking time is also too long as mine came out way to crispy.  I love blondies so I may try it again adjusting the ooking time and swapping some of the brown sugar for regular.

I just made this cause I was craving Blondies...They turned out good. The only thing I changed was I put 1/4 c of regular sugar and 3/4 c brown sugar...I didn't have chocolate chips so I just used pecans. I also put the batter in mini muffin tins so they were bite size. I cooked them for about 10 minutes.  I'll make it again..next time with chocolate chips.
