Tater Tot Casserole

Ingredients (use vegan versions):

    1 batch of "Nutritional Yeast Con Queso Sauce" except instead of using tomatoes, add a can of condensed vegetable soup (undiluted)
    4 oz. vegan burger-style crumbles
    1/2 cup favorite frozen vegies (mixed vegies is great, but my kids love just corn)
    32 oz. bag vegan frozen tater tots

Directions:

Make one batch of "Nutritional Yeast Con Queso Sauce", but omit the canned tomatoes and use a can of condensed vegetable soup, without adding water.

Preheat oven to 350 degrees.

Pour sauce into 13X9" baking dish, stir in crumbles and frozen veggies until mixed and everything is covered with sauce. Spread in bottom of pan to make even. Dump bag of tater tots on top of mixture, and even them out a bit.

Bake 30-40 minutes until tater tots are golden brown.

Serves: 8

Preparation time: 1 hour

A great version of a classic American dish.
This is an awesome, easy recipe! Perfect for a quick dinner.

My mom made a tator tot casserole a lot when we were small and this is just as good if not better

Made this last night, used "meat" crumbles and broccoli and everyone loved it.  There were no leftovers!

This was simple and tasty! I used Healthy Choice's Country Medley Vegetable Soup and frozen mixed veggies. I didn't have any crumbles, so I just made it without them. Some things I might try next time:

- Not putting salt (or reducing it) in the Queso Sauce because the soup probably has enough in it.
- Putting some sliced onion on top of the sauce before adding the tots.
- Adding some crushed red pepper flakes to the sauce (might give it some extra kick)
- Putting a small amount of diced tomatoes in the sauce 'cuz well...I like tomatoes.
- Using a different soup next time and seeing how it affects the overall taste.

I'm wondering if using sliced potatoes instead of tots would come out equally as tasty.

I bet this could be turned into a Mexican Tater Tot Casserole: Use Queso Sauce (keep the tomatoes), black beans, crushed tortilla chips, green chiles, and salsa. Add some jalapeno if you like it spicy. Maybe even use some Soyrizo.

Overall, nice casserole! I love tater tots, so I was immediately attracted to this recipe. I can definitely see myself making this in the future!  Thumbs Up

Tried this because we were curious about whether a tater tot casserole would be any good. I found that there were several things that I would have changed about it if I would have known.

1. This recipe calls for one batch of the queso cheese mix, but this wasn't hardly enough to cover the veggies in the bottom of the dish.
2. I used way more than 1/2 a cup of veggies and we thought it still didn't have enough. Same with the meat crumbles.
3. The bag of tater tots I used was 28oz instead of 32oz and we still felt that there were far too many tater tots.

It's an okay dish, and it gave me ideas for something new I'm going to try next time, but I will probably never make this again. My friends felt that the items didn't necessarily go well together. It seemed like a dish I would likely make when I felt like a food that tasted like it was unhealthy (while probably still being fairly healthy).

Tasty but I doubled the veggies and crumbles and it still seemed like there weren't enough veggies. I also didn't have condensed soup so I used a home-made cream of mushroom kind of soup, but even though it was more "liquidy" it worked well. I will defiantly make it again, but with way more veggies.
