This was simple and tasty! I used Healthy Choice's Country Medley Vegetable Soup and frozen mixed veggies. I didn't have any crumbles, so I just made it without them. Some things I might try next time:
- Not putting salt (or reducing it) in the Queso Sauce because the soup probably has enough in it.
- Putting some sliced onion on top of the sauce before adding the tots.
- Adding some crushed red pepper flakes to the sauce (might give it some extra kick)
- Putting a small amount of diced tomatoes in the sauce 'cuz well...I like tomatoes.
- Using a different soup next time and seeing how it affects the overall taste.
I'm wondering if using sliced potatoes instead of tots would come out equally as tasty.
I bet this could be turned into a Mexican Tater Tot Casserole: Use Queso Sauce (keep the tomatoes), black beans, crushed tortilla chips, green chiles, and salsa. Add some jalapeno if you like it spicy. Maybe even use some Soyrizo.
Overall, nice casserole! I love tater tots, so I was immediately attracted to this recipe. I can definitely see myself making this in the future!
