Cauliflower and Avocado SaladIngredients (use vegan versions): 2 cups chopped cauliflower (small pieces)
1 avocado, sliced
1/4 cup diced red onion
1/4 cup chopped fresh basil
1/4 cup Kalamata olives, pitted and chopped (ie., sun-dried would be great too)
1/8 cup finely diced red bell pepper
2 tablespoon fresh lemon juice (optional)
Directions:Combine all of the ingredients in a mixing bowl. I usually add the avocado last since it breaks up relatively easily. Then season to taste, but I think this is great just as it is.
Also, I've found that letting this sit in the fridge for awhile (let's say 2-3 hours), allows all of the flavours to marinate and it tastes just lovely:) One of my faves...
Serves: 4'ish
