Phil's Berry Oat Cookies

Ingredients (use vegan versions):

    1 1/2 cups oat flour
    1/2 cup date sugar
    1/4 cup sugar
    1 teaspoon baking soda
    1/8 teaspoon salt
    cinnamon
    nutmeg
    1/2 cup apple sauce
    1/4 cup canola/vegetable oil
    1/2 cup dried cranberries

Directions:

Blend/grind about two cups of oatmeal to make the oat flour.

Mix together flour, baking soda, salt and spices.  Separately mix together sugar, apple sauce and oil then mix into dry ingredients.  Mix in fruit.

Chill and roll into balls or spoon directly onto greased cookie sheet.

Bake for 13-15 minutes at 350 degrees F.  Remove from oven and let cool for 5 minutes.

Note: You can substitute the date sugar but they don't seem to hold up as well.

Serves: 20 cookies

Preparation time: 25 minutes

Okay, so I messed with the main ingredients... I had neither dried cranberries nor oat flour. I substituted the closest things I could get - dried currants and barley flour.

This was the first time I've ever made 'cookies'. I made biscuits when I was little - that is, what New Zealanders and Brits call biscuits, like a crunchy cookie. Anyway, they were well worth the experiment. Yummy, soft and chewy, a nice change from muffins. And very different to biscuits.  Grin

P.S.  I was glad to find a recipe which called for oil instead of heaps of vegan margarine, because mine is so expensive.
