Johnny Cakes

What you need: 

corn oil for greasing hot pan
1 cup yellow or white cornmeal
1/2 teaspoon salt
1 teaspoon sugar
Egg substitute (1 egg's worth)
1 cup boiling water

What you do: 

This recipe is from my mom
Put cornmeal, sugar and salt in mixing bowl.
Add boiling water and give a quick stir.
Add egg substitute.
Beat well. (more water can be added to make a thinner batter)
Heat and grease pan to a medium-high temperature.
Ladle batter onto pan. Flip over when sides are light golden brown. Make sure the middles are cooked.
Serve hot with vegan butter.

so good! I've never had Johnny Cakes before, so I tried this recipe. They are so awesomely delicious! Kinda like fried grits  :)>>>. Next time I'm gonna try them with a little nutritional yeast, whole sweet corn kernels, and a dash of cayenne. Yum.

I made these for breakfast at a non-veg mate's house with cornstarch and water for the egg substitute, and everyone loved them!  No one realised they were vegan.  Fantastic with blackberry jam or marmalade.

Yum! 

I used 1Tb. flaxseed plus 3Tb. of water for my egg substitute and added a *smidge* less water (preferring a thicker batter/cake).  Also tasty topped with salsa!
