Perfect Oatmeal
Ingredients (use
vegan versions
):
2 cups soy milk (I just use plain), plus more
2 (semi-scant) cups organic rolled oats
1 1/2 tablespoons organic brown sugar
several good sprinklings of cinnamon
pinch salt, optional
2 handfuls pecans, roughly broken with hands
Directions:
-Pour 2 cups soy milk into small sauce pan, and turn heat to high (our stove heats very quickly).
-Wait for a couple of minutes until soy milk begins to steam, and bubbles are ALMOST starting to form. Turn heat to low.
-Add oats, and stir.
-Allow oatmeal to cook on low for about 5 minutes, or until most soy milk is cooked out, and oats are cooked.
-Turn off heat, and remove from burner.
-Add a few splashes of soy milk (1/4 cup, depends on how much liquid you want), brown sugar, cinnamon, salt, and pecans (I keep mine in the freezer).
-Stir and serve! Should be perfect!
Serves: 2 big bowls
Preparation time: 5-8 minutes

I also use maple syrup sometimes...instead of the brown sugar, and it tastes exactly the same! I've been changing it up a lot lately...adding fruits and such, but I always stick to this basic recipe!

Yay! Actually..I would probably not make oatmeal so often (because it takes more time than toast...and I don't crave it), but my husband never gets tired of it. It really doesn't even take that much time..just the thought of doing it..is off-putting for some reason! It's always great though. Since we're cutting down on costs..I'm now only doing 1 1/2 c soy milk..and it was still plenty (fewer oats, also). Thanks!

this tasted really good, but the consistency was not quite right for me; this was my first time making homemade oatmeal and it did not get 'mushy' as i was expecting. maybe it was just my oats. i will make again, but let it cook for longer (and add raisins next time b/c my hubby insists!)

Yeah, it's not really a recipe for a "mushy" oatmeal. For mushier, you probably want to add more soy milk than oats..and let it cook longer! My husband doesn't like it mushy, but I usually add some extra soy milk to mine after it's cooked. Thanks for trying it!

thanks for the tip! I made it again this morning just for me, and used 2/3 cups oats with 1 cup soymilk, and let it go for about 15 minutes. it turned out great with a moderate level of mushiness, and i may cook it even longer next time to up the "mush factor" even more. yummy recipe!

i tried it with the maple syrup this time... and i think it tastes different, but in the most wonderful way... i used 1/2 cup oats, 1 cup vanilla soymilk, cooked for 30 minutes, then added two teaspoons maple syrup, cinnamon, and a handful of raisins. hands down the BEST oatmeal i have ever had. i feel as though i have at last achieved my full oatmeal-making potential!

AC! This is so good and easy. I don't know why I never learned to cook oatmeal the right way...**raises hand in guilty confession** I have always done the instant, which is probably full of all kinds of processed sweeteners and crap. I made it this morning with raspberries and it was SO GOOD! This will definitely be my default warm winter breakfast.

I thought this was kinda bland. Maybe I am just not an oatmeal kind of person, so far there is only one recipe I like, and that is for pumpkin oatmeal. I will try this again and maybe try adding even more cinnamon and sugar. My soymilk was homemade and unsweetened so maybe that was it, I dunno.

Virginiah, you could add all kinds of things! You could definitely do more brown sugar (I'm sure the unsweetened soy milk is one of the "issues"), and you can even add pumpkin! I've added MANY different fruits. OR, you might just not be at "oatmeal person." I think oatmeal is still growing on me.

Wow, who knew I could actually finish a whole bowl of oatmeal?? I normally can only "choke down" a spoonful or two before the texture totally grosses me out. I actually enjoyed this "chunky" style. If you're like me and you desperately want to like oatmeal, try it this way! My husband, who was already an oatmeal lover said it was different, but that he prefers it chunky-style now!
P.S. The only substitution I made was vanilla rice milk instead of plain soy milk.

I have eaten this every morning for the last two weeks!! Yum! I've even used water instead of soymilk and it still came out pretty good.
