Asian Noodles with Peanut Butter and Chilies

Ingredients (use vegan versions):

    1 pound dried soba noodles or spaghetti
    1/8 cup sesame oil
    1/4 cup soy sauce
    1/2-1 tablespoon sweetener
    1 1/2 tablespoons balsamic vinegar
    2 teaspoons salt
    1 cup chopped fresh cilantro
    4-8 green onions, sliced
    1-3 tablespoons spicy red chili sauce
    3-5 tablespoons peanut butter
    chopped peanuts, optional

Directions:

Cook noodles in large pot of boiling, salted water until just tender. While cooking, prepare sauce: Combine sesame oil, soy sauce, sweetener, vinegar, salt, chili sauce, and peanut butter (I use a whisk). Drain noodles when done (I like to rinse them for this recipe).  Stir in sauce (I use tongs), and add cilantro and green onions. This can be served cold or hot. Add peanuts to top, if desired. Very good!

Makes: 6 servings, Preparation time: 10 minutes, Cooking time: 15-20 minutes

This would also be great with some added coconut milk-for a creamier sauce.  Thumbs Up

Ok, to be more specific, and make some modifications, when I just made this I used less than a lb of whole wheat spaghetti (you would have to make more sauce for more pasta), the stated amount of sesame oil and soy, 1 tbs florida crystals, 1.5 tbs balsamic, I think less than 2 tsps salt would work, I didn't have any cilantro (it's great in it, though), used 4 green onions, 2 tbs sriracha, 3 tbs peanut butter, and added 1/4 green bell pepper, 1/2 a lime, and a few tbs coconut milk. Great flavor!  Thumbs Up

I loved this recipe & so did my omni hubby!  As suggested by Allychristine, I added coconut milk.

I had no sesame oil, so I added a dash of toasted sesame seeds to vegetable oil (as a replacement).

For a bit more texture I tossed some of the peanuts for garnish into the sauce since all I had was creamy peanut butter. A chunky peanut butter would be great for this dish, I think.

I also decreased salt to 'a dash'. I would also reduce the noodles next time. I didn't have any cilantro, but instead added garnishes of flaked red pepper, chopped unsalted peanuts and the chopped green onlon as stated in the recipe.

I prefer my asian dishes it a bit spicy, so the garnishes above toppings worked nicely to add a bit of heat, but without overwhelming the flavor of the sauce.

I loved this tasty dish!  Thumbs Up

OMG this was so good!  I made it last night and highly recommend it to everyone!  The flavor of the sesame oil blended really well with the PB.  I made a double batch of the sauce and there was not a drop left at the end of dinner.  I also added some crushed red pepper to spice it up even more and I didn't have cilantro on hand so I left it out.  I served it with tofu and stir-fried asian veggies...this will definitely be a staple recipe for me!

 Thumbs Up  I never measure either..so sometimes if I want it creamier, I just add a little water (or broth)! I'm sure more coconut milk would help also. But water always works for me since there's already so much great flavor hangin' out in there.  Smiley

SO GOOD!! I used rice wine vinegar instead of balsamic, agave for the sweetener, thai sweet chili sauce, and I was unfortunately out of cilantro. Absolutely delicious, and next time I'll buy some cilantro (it's one of my favorites). AC, thanks for the super yummy recipe.
