Best Basic Guacamole

Ingredients (use vegan versions):

    2-3 medium sized, ripe avocados
    1 small-medium tomato, diced
    2-3 medium garlic cloves, minced
    1/2-1 lime
    salt to taste ( I like 1/2-3/4 tsp)
    pepper to taste ( I like a lot of pepper!)

Directions:

In a medium sized bowl, squeeze enough lime juice to cover bowl (just so avocado will be in contact with the lime juice), slice the avocado in half and remove pit (use your knife and wiggle it back and forth). Scoop out the avocado and place in the bowl. Add the minced garlic, and the rest of the lime (one small lime is good). Squish the avocado mixture with a fork until it is to your desired texture ( I like mine pretty smooth). Add the tomato, salt, pepper, and mix. Taste and add more salt or pepper if needed. We love it on bean and rice tacos, or just with baked tortilla chips! : )

Serves: 2-3

Preparation time: 5-10 minutes

Well, I just started doing it so that when I put any avocado in there..it would keep more of its green color. Since it's in there..while I'm chopping up other things. I don't know that it makes THAT MUCH  of a (or any?) difference, but hey..why not?! I've noticed that my guac always has a brilliant green color, and stays that way for a long while (until it's all gone). So, maybe try it and see if you can tell a difference. I really love fresh jalapeņo and basil in there too. It's my new default way.

I made this last night and it was so yummy and fresh. I ate it as is and also used it to make a quesadilla. Delicious!

This was great. I added half of an onion finely chopped and lots of fresh cilantro. If you are taking this somewhere and do not want it to brown, you can save the pits from the avocado and place them in the bowl and remove when serving.

My boyfriend often buys store made guacamole.  He pays a fortune for it too.  I used this recipe to show him how easy it is to make homemade guacamole.  From now on, this will be our go-to guacamole recipe.
