Quick and Easy Spinach DipIngredients (use vegan versions): 1 box silken firm tofu (Mori-Nu), drained
1 cup thawed frozen chopped spinach, drained
1/2 cup vegan mayo
2 cloves garlic
1 packet vegan onion soup mix
1 tablespoon lemon juice
Directions:Combine everything in a food processor or Vita-Mix and blend until combined. Refrigerate overnight to let the flavors develop. However, I will admit that it tastes pretty good fresh out of the food processor!
Cammers and I made this for a Vegweb potluck. It's fantastic and a good base recipe if you want to add other things!
