Quick and Easy Spinach Dip

Ingredients (use vegan versions):

    1 box silken firm tofu (Mori-Nu), drained
    1 cup thawed frozen chopped spinach, drained
    1/2 cup vegan mayo
    2 cloves garlic
    1 packet vegan onion soup mix
    1 tablespoon lemon juice

Directions:

Combine everything in a food processor or Vita-Mix and blend until combined.  Refrigerate overnight to let the flavors develop. However, I will admit that it tastes pretty good fresh out of the food processor!

Cammers and I made this for a Vegweb potluck. It's fantastic and a good base recipe if you want to add other things!

Serves: 2 cups

Preparation time: 10 minutes

we used a kosher brand. its a normal brand, i can't remember who makes it! but usually the kosher versions don't have dairy in them.

Yummy!  This was the bomb!!!  I used the whole box of frozen spinach (10 oz?) and a can of water chestnuts (diced).  I can't stay out of it!!!! Cheesy
