Chocolate Layer Cake

Ingredients (use vegan versions):

    3 cups flour
    2 cups sugar
    1/2 cup cocoa
    2 teaspoons baking soda
    1/2 teaspoon salt
    1 tablespoon vinegar
    2 cups water
    2 teaspoons vanilla
    2/3 cup oil

Directions:

Pre-heat oven to 350 degrees F.  Mix together dry ingredients in mixing bowl.

Add oil, vanilla, vinegar, and cold water and beat together until smooth.

Pour into lightly greased and wax paper lined pans. Makes 3 8-inch layers (bake 20-25 minutes) or 2 9-inch layers (bake 30 minutes) or 1 9x13-pan (bake 40 to 45 minutes) or 24 cupcakes (bake 15-18 minutes).  Let cool in pans about 10 minutes and then carefully turn out on cooking rack.  Peel off waxed paper immediately.  Cool completely and then frost with your favorite frosting.

I made 2 9-inch layers and 4 individual heart-shaped cakes.  I frosted the large layer cake with peanut butter icing and topped with melted chocolate thinned with a little soy milk.  The heart-shaped cakes will be decorated with whipped topping and cherry pie filling for a Valentine treat.  Remember this is cake--sweet, gooey and not really healthy--but great for a special occasion.

Serves: 12-15 slices or 24 cupcakes

Preparation time: 40-60 minutes including baking time

I made this and loved it. Super easy and fun to make. I used dark chocolate cocoa powder to make it even more rich. Yum, Yum.
