Southern Macaroni Salad

Ingredients (use vegan versions):

    4 cups of uncooked macaroni noodles
    1 cup vegan mayo
    2 tablespoons vinegar (any kind will work)
    1/4 cup dijon mustard
    1/3 cup of sugar
    2 teaspoons salt
    2 teaspoons pepper
    2 stalks of celery
    1 carrot
    small-medium sized onion

Directions:

Bring the pasta water to a boil and cook the macaroni for about 8 minutes or until al dente. Rinse, drain, and set aside.

Whisk the vegan mayo, sugar, vinegar, dijon mustard, salt, and pepper in a large bowl. Finely dice the celery and onion and add it to the bowl. Grate the carrot in the bowl and mix well. Add the drained macaroni and combine. This is best left in the fridge for 24 hrs before serving.

Serves: a large group

Preparation time: 20 minutes

I am not sure how to edit the recipe at this point but I forgot a crucial ingredient! You also need 1/4 cup of dijon mustard. Mix it in with the other wet ingredients. Enjoy!

I love this southern Macaroni Salad I make it for all of my holiday meals, also potlucks and just because! Luckily I read the note about the mustard but I kinda figured it was missing because I know that when my parents made it when I was young they would put mustard in so I had a feeling something was missing. This is a perfect recipe. Thank you.

i think this tastes best right after making it... if u let it sit in the fridge for awhile all the dressing absorbs into the pasta... still good though
