Orange Glazed Veggie Stir Fry

Ingredients (use vegan versions):

    1 garlic clove, minced
    1 green onion, chopped
    1/2 teaspoon fresh ginger, minced
    1/2 tablespoon orange juice
    1/2 tablespoon lemon juice
    3/4 tablespoon rice vinegar
    1 tablespoon soy sauce
    1/8 cup water
    1/8 cup sweetener
    1/4 red pepper, sliced
    1 cup broccoli florets
    1/2 cup sliced mushrooms
    10 baby carrots, halved lengthwise

Directions:

1.) In a small bowl, combine ingredients from orange juice up until and including sweetener. Mix well with a small wisk.

2.) In a small skillet over medium heat, add the garlic, ginger and green onions.

3.) In wok or other large skillet, add peppers, broccoli, mushrooms and carrots over medium heat.

4.) Once garlic and ginger has began to brown, add sauce mixture and reduce heat to a simmer. Simmer for 3 minutes then add into skillet with veggies.

5.) Cover skillet and let sauce reduce with veggies for a few minutes.

6.) Serve mixture over rice to absorb extra liquid and ENJOY!

Serves: 1

Preparation time: 10 minutes

This made a yummy sauce. I used MorningStar meal starters chik'n strips. I thought they were too realistic and ended up not much of them...

But, the sauce was great! I didn't have OJ so I just used a small amount of orange flavoring. Overall it was quick and easy.

This is delicious. I stir-fried 1 onion, 2 carrots, 2 stalks celery, 1 red & 1 orange bell pepper, a handful of greenbeans, some sliced mushrooms, and some rehydrated TVP chunks and cooked them with this sauce, which I doubled. On top of doubling the sauce, I also doubled the citrus juices and the ginger, and added 4 cloves of minced garlic.

Overall, the sauce was great, but I added some tropical hot sauce to it because I felt like it needed a kick. I should have marinated my TVP chunks in something, but other than my bland TVP, my meal was delicious. I served the stir-fry with quinoa cooked in vegetable broth. Next time, I think I'll serve this alongside sauteed greens and maybe grilled tofu.

this was very, very good! and so easy too. i added a bit of cornstarch and used agave as my sweetener, served over basamti rice with bragg's. thanks for recipe  Smiley

I used this as a jump off point for stir fry. I had a bag of veggies that had to be used. I used the juice of a whole medium-small orange, lots of sugar and soy sauce, vinager. I didnt have onion or lemon so those were out.
But very good!
I threw some sesame seeds in with the garlic to brown, yummy.

I only made the sauce that goes with this recipe. I used apple cider vinegar rice vinegar and I added mango juice instead of the lemon juice. It made a very refreshing, fruity sauce that I poured over steamed veggies.
