Incredibly Easy "Creamy" Potato and Leek Soup

Ingredients (use vegan versions):

    1 half large yellow onion, finely chopped
    1 leek, finely chopped with green leafy ends removed
    1 celery stalk, finely chopped
    3 medium potatoes, cubed
    1 tablespoon dill
    1 tablespoon dried parsley flakes
    dried vegetable stock (follow instructions on package)
    3 tablespoon vegan margarine
    1 to 2 cloves of garlic
    3 tablespoon whole wheat flour
    salt and pepper to taste
    water

Directions:

Combine onion, leek (dark green stems removed), celery, potatoes, 1 tbsp vegetable stock and spices in a large soup pot.

Fill pot with water until the ingredients are covered.

Cover and cook on high heat until liquid reaches a boil.

With a potato masher, hand mixer, food processor, or blender combine the ingredients until mashed thoroughly.

Add margarine

Combine flour with 1 cup of cold vegetable stock and mix until lump free.  Add to soup stirring rapidly until mixed.

Let simmer for 10 minutes and serve adding salt and pepper to taste.

Serves: 4 small servings

Preparation time: 10 minutes

...ummmm, shouldn't I have to boil the potatoes for at least 20 minutes or so?  They are still hard when the water comes to a boil.  I tried to mash them with no success. I'll let you know how it comes out though.  (it's still cooking!)  Undecided

 Thumbs Up  Okay, so I had to cook the potatoes for an extra 20 minutes or so, maybe b/c I cut the cubes too large.  I added 1/2 Tbsp of dried dill, as I wasn't sure if the recipe called for fresh or not.  This is so scrumptious!  5 stars all the way!  I'm not sure what this would go best with, but just the soup alone is good enough for me.  Thank you so much for the recipe!!  Unfortunately, my husband said he wants his with a chicken salad sandwhich. Sad

My mouth watered at the thought of this. I am incredibly broke right now, and potatoes are on sale for $1.99 for 5 lbs...guess what I'll be making a huge batch of!!! :-)

This was really, really yummy. I cooked it a little different: I sauteed the onion, leeks and celery in margarine, then added them to the mashed potatoes. It was a little thick, so I added more veggie stock than called for. I only blended about 2/3 of the mixture, so the soup has some 'chunk' to it. I also added a teaspoon of dried basil. It was delicious, and my meat-and-potatoes boyfriend loved it to!
