The Devil Made Me Do It

Ingredients (use vegan versions):

    1 cup pitted prunes
    1/2 cup water
    2 (heaping) tablespoons Ener-G Egg Replacer powder
    1/2 cup water
    2 cups sugar
    2 cups all purpose Flour
    3/4 cup baking cocoa
    2 teaspoons baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup soy milk
    1 tablespoon vinegar

Directions:

1) Preheat oven to 325 degrees F.

2) In a blender puree prunes and the first 1/2 cup of water. When smooth add egg replacer powder and the second 1/2 cup of water. When thoroughly blended add sugar until combined.

3) In a bowl sift together the flour, cocoa, baking soda & powder, and salt.

4) Dump as much of the prune/sugar mixture into the dry ingredients as possible. Slowly add in half of the soy milk.

5) Pour the remaining milk into the blender to help remove the residual prune mixture. Pour remaining milk into batter.

6) Thoroughly spray your Budnt pan. Stir the vinegar into the batter and then pour into pan.

7) Bake for 1-1.25 hours or until done.

Serves: One Bundt cake

Preparation time: From start to finish about 1.5-2 hours

When I saw prunes as a main ingredient in this cake, I new I had to try it.  It made a really nice bundt cake and didn't sink at all in the middle.  The flavor was good, too.  I would consider it to have a "light" chocolate flavor.  I prefer an intense chocolate flavor so next time I will probably add extra cocoa powder and some vanilla.

Yummy!!!  I did add about a teaspoon of vanilla.  Also added chocolate chips just before putting into pan.   Wonderful and beautiful.  I used a simple icing recipe and drizzled it over the sides.  Very popular!!
