Delightful Mac and Cheese

Ingredients (use vegan versions):

    3/4 cup nutritional yeast
    1/4 cup pine nuts
    2 teaspoon onion powder
    1 teaspoon garlic powder
    1/2 teaspoon salt
    1 tablespoon parsley
    1 teaspoon pepper
    1 tablespoon soy sauce
    1 cup water
    3 tablespoon olive oil
    1/4 cup flour
    1 cup uncooked pasta of preference
    water for boiling
    bread crumbs or anything else you like to mix in or top your mac and cheese with

Directions:

A disclaimer for all recipes by me: measurements may not be exact.

Put water on to boil.

While water is boiling, put first seven ingredients in the blender and blend until there isn't chunks of pine nuts (I use a magic bullet and it works very well and quickly). Add water and soy sauce and blend more.

Preheat oven to 400 degrees F.

Make a little bit of roux with your oil and flour by warming the oil adding in the flour and stirring constantly until you don't have any lumps. Pour the "cheesy" sauce you made in the blender into it and stir until it is warm and at your desired consistency (if it is too watery, let it reduce some). When it gets to that consistency, remove from heat.

While this is all happening hopefully you have been watching your water and put your pasta in at some point and it is ready. Strain through colander and pour pasta into the pan of cheesy sauce you made. Transfer into over safe dish (if desired top with bread crumbs or stir in anything you might like) and put it into the oven for 10 or so minutes.  Enjoy.

Serves: 3

Preparation time: 30 minutes

Hi there!  Just wanted to let you know that I'm a vegan too!  I do have splurging days like once a month on some dairy, but other than that, I'm a fruit and veggie person!  I just made this recipe for my family, because I was looking for an easy recipe that I could make quickly, and of course that was vegan!  I must tell you, this is a GREAT recipe!  Mine turned out to be more of a green color.  When I went and gave a spoon to my mom, who is also a vegan, she looked at it and then back at me for about 10 seconds.  Finally, I just said, try it!  She put it in her mouth and her eyes lit up!!  She said to me, "I had intended on eating nothing but raw today, but now I can't because I've got to have more!"
   So good job on a great recipe!  I've printed it and it will be on my list of keepers.  By the way, I looked on your profile and it said that you were 22 and that your name is Hannah.  Hannah has been one of my picks for one of my daughters when I get married...I'm 20 now.  Sorry for talking too much.  (smiling)

fantastic recipe! DR and I really enjoyed it. I subbed raw cashews for the pine nuts (what I had on hand) and left the parsley out. I also used fresh garlic. Will make again! (and again and again!)

ohhh, i'm so glad you guys liked it! i am always afraid about the measurements i put up because i don't measure anything.
gardengate, i try to eat mostly raw and this is one of my downfalls Sad
baypuppy, i have subbed cashews and walnuts before... it is just something to add more depth than a NY only sauce.

The measurements you had were pretty much perfect!  I think I will leave out the parsley next time just to get rid of the green color.  I did add more garlic to mine, but it tasted just great!

It actually tastes cheesey, which is fantastic. I did have some trouble with the liquid, which there seemed to be waaaay to much of, and I ended up draining a bunch. Created a kind of "cheese mush" but still really good!

see, this is what i am afraid of with my recipes, since i don't measure. i usually make a bunch of 'cheese' so that i can reduce it either while cooking on stove top or while baking. i am glad you liked it, though!

this was so awesome!  yum.  i made slight changes after reading the reviews, i halved the parsley so that it wouldnt turn out green and i added an extra half cup of pasta.  i would say having 1 cu p of pasta would be good though, mine turned out not super cheesy, but i like it that way.

mmmm, it was soo good.  i really think the little bit of nuts really adds something to it.  good call on that one!

Whole foods didn't know???  Bizarre.  Red Star is a brand I see a lot.  I find in bulk in the local grocery and health food store.  It looks like a soft, flaky cornmeal.  It's great on anything pasta, or popcorn, or anything you used to use cheese on.

I used cashews and only 2/4 of yeast. The sauce was really thick when mixed with the pasta. I don't know why though.

I have to say that this is the best tasting mock mac n cheese I've had to far. It still doesn't taste exactly like how I remember but it is good. Thanks!

awesome! it's definitley something you can play around with, but the key is the roux plus nuts plus nooch (IMHO)!

If you have ever been discouraged by vegan "Mac & Cheese" recipes-- Try this one!  It's delightful indeed!  I had a huge hankering for some comfort food tonight and tossed this together.  It's creamy and delicious!  I didnt' have any onion powder, so I ended up slicing a little bit of onion and throwing it into the food processor with all of the spices. Also, I added some cayenne pepper, a dash of nutmeg, spinach and peas.  A great meal to curl up to on a cold winter's night!
