Five Minute Minnesotan Mousse

Ingredients (use vegan versions):

    1 SoyaToo Soy Whip box, chilled
    1 cup plain vanilla soy yogurt
    1/2 cup sugar
    1/4 cup cocoa, jam, or peanut butter (optional)

Directions:

Whip soya too about 2 minutes with sugar until firm.  Add soy yogurt and 1/4 cup of any flavoring you choose and whip 1 more minute.  Layer into glass jars and place in freezer (or outside if you live where it's frigid) for two minutes until firm.  If you don't want to eat it immediately, or are from somewhere warm, chill in the fridge for 30 minutes or more.

Serves: 4

Preparation time: less than 5 minutes

I used a couple tablespoons of jam and blended them in with the yogurt/soy cream mix for the berry layer (chocolate or peanut butter work well too).  You should try it!   Some chemical reaction occurs from adding the yogurt to the whipped cream, it will thicken almost to a cream cheese consistancy.

Also, you can add a tsp lemon + 1-2 Tbsp cream cheese to the plain mousse that it makes a great filling for cannoli or tiramisu!!
