Bear Claws

Ingredients (use vegan versions):

    Sweet Dough:
    1/4 cup soymilk
    1/4 cup sugar
    3/4 teaspoon salt
    2 1/2 teaspoons margarine or coconut oil
    1/4 cup warm water (105-115 degrees)
    1 package active dry yeast (2 1/4 teaspoon)
    1 tablespoon baking powder
    2 1/4 cups flour (I used 1/2 white, 1/2
    wheat)
    2-3 tablespoons melted margarine (for
    brushing on the dough)
    Filling:
    2 apples, diced
    1/2 cup chopped nuts (I used almonds)
    3 tablespoons sugar
    1 teaspoon cinnamon
    1/2 lemon or large lime, juiced
    1 1/2 teaspoons cornstarch

Directions:

Heat soymilk and stir in sugar, salt, and margarine or coconut oil. Cool to lukewarm. Pour warm water into large bowl and sprinkle on the yeast. Stir until dissolved. Add the lukewarm soymilk mixture, baking soda and half of the flour to the yeast mixture and beat until smooth. Stir in remaining flour to make a stiff dough. Knead the dough on a floured surface until smooth and elastic, about 8 mins. Put the dough in a greased bowl, turning to coat all sides. Cover and let rise in a warm place until doubled in size. Once double in size, punch down dough and roll out into a 9”x18” rectangle on a floured surface. Brush the rectangle with 1 tablespoon of the melted margarine.

Combine all the filling ingredients except nuts and set aside for 5-10 mins.  to let the flavors meld. Once nice and juicy, heat in the microwave or stovetop until the liquid starts to boil and thicken. Sprinkle almonds over the dough, then spread the apple mixture on top of that. Fold outside third of dough over center. Fold again to make a 3-layer strip 18” long. Pinch ends to seal. Cut and divide the dough into 9 2”x3” sections. Make four 1/4" cuts in one side of each section.

On a greased baking sheet, take each piece and shape into bear claws. Do this by spreading the four cut sections in a kind of arc. Brush each bear claw with margarine and sprinkle with sugar and cinnamon. Let rise, uncovered, until doubled in size, about one hour. Bake at 400 degrees for 15 to 20 mins. or until golden. Enjoy! I just made this recipe.  I am not sure what happened but the dough was stiff, tough and very hard to work with.  It was so hard to work with that I had to make it into a strudel-ly type thing instead of bear claws.  It looks pretty and tastes good but the dough is still tough.  I will try the recipe again because my son likes it and maybe I did something wrong or left out an ingredient although I don't think so.  I make bread all the time so I am use to working with dough...I will post again when I make them again. My sons were at home while I was making them so maybe I was distracted and forgot to add something.  : O

Hehe no problem about posting the pic in the review.. it's pretty Smiley..

but there are a few things i can think of that would have made your dough tough..

first, I am super lazy and never knead my dough as long as it says.. I prolly kneaded it for 4 instead of 8 minutes..

second, i live in the caribbean and it is really hot and humid here, so maybe my dough had more moisture in it and was able to rise more?

third, i dont actually measure my yeast cuz i have a large bag of it, so its possible i poured more than the recipe called for..

and lastly, i really dont think the "whole wheat flour" here on the island is actually whole wheat flour.. I have heard rumors that it is actually white flour with wheat bran added back in, but have never been able to confirm anything.. they sell it in clear plastic bags.. in my experience, white flour is much softer and rises alot more than wheat, so there is that..

anyways.. I really hope it works out for you, cuz they were sooo good.. my husband doesnt like food very much and he ate these like everyday for a week, which is saying alot Wink

I made these and my non-vegetarian family loved them.  However, the ingredients state "baking powder" while the directions state "baking soda."  Can Oktokrewl comment on which it's supposed to be?

uh oh! sorry.. i usually try to re-read over my recipes better! it is supposed to be baking powder..

i guess if you use baking soda instead they will just be a bit more biscuit-y.. but i meant for it to be bakind powder Wink

I tired making these a few days ago.... something went wrong. Like one of the previous post my dough was also very stiff. Too stiff to work with, I ended up throwing it out actually. I do a lot of baking, breads and pastries, so I'm not really sure what I did wrong, or if it's the measurements in the recipe. They look so yummy and pretty in the picture, I was so sad that mine didn't come out. I'll probably try making them again some day. Maybe with a little bit more yeast and using regular flour instead of half WW flour and regular. Sad

I made these a few days ago and loveeed them so much.  I did have to add maybe 1/4 cup of water to make the dough easy to work with.. so next time I'll make more of the special liquid mix in the beginning.
Was going to take pictures.. but my camera battery was out  so I'll have to make these again soon, what a shame Tongue
It kinda got scary when the dough didn't rise.. and I saw people saying they had problems, but in the end it all worked out and my stomach was very satisfied.  Thanks for the recipe  Thumbs Up

it didn't rise well for me too, but it was my fault.
this recipe is great! claws look soo cute. i didn't have any nuts so i added raisins.
next time i'll try this with cabbage or bell pepper-onion-tomato filling.. ^^;

I thought these were good, but the dough was horrible to work with. It was soo stiff! I want able to roll it out as large as I wanted...wasnt strong enough..hehe!

huh.. yeah i guess from the reviews the dough is just too stiff.. i guess add about 1/4 cup liquid to fix that and they should be nice and fluffy Smiley

i really think these worked out so well for me cuz it was so warm and humid when i made the recipe.. i havent tried making them again since ive been back in CA.. i'll try it out with the 1/4 cup extra liquid.. the first time i made them the dough was actually quite soft.. like cinnamon roll dough or something.. its possible i mis-measured, i just dont know..

im glad they tasted good tho!

ok.. i am making these again right now to fix the recipe.. the dough is rising as i type..

i guess i just mis-wrote when i wrote this recipe.. for sure 1/2 cup of liquid is not nearly enough..

i increased the liquid up to 1 cup total (used 1 cup soymilk and just omitted the water cuz i have a bunch of soymilk in the fridge i wanna use up), increased the flour a 1/4 cup up to 2 1/2 cups and upped the coconut oil from 2 1/2 teaspoons to 3 teaspoons (which is 1 tablespoon btw Smiley)

the dough is smooth and knead-able and is rising wonderfully.. so just up the liquid to 1 cup total and the recipe should be perfect.. sorry about that for everyone who already tried this out.. wow
