I only had about 1/2 a cup of red lentils left [shopping day tomorrow : ) ] so I used green lentils, and just cooked it for forever, but it was really good.  I'd definitely like to try it with red lentils next time though.
Also had some fresh spinach which I sauteed with some crushed garlic, little bit of olive oil and some pepper, went really well with the lentil mix.  Good dinner, easy and versatile : )
