Easiest Seitan

Ingredients (use vegan versions):

    1 cup vital wheat gluten
    3/4 cup broth
2 tablespoons soy sauce or Braggs Liquid Aminos
2 teaspoons seasoning of choice (I use vegan powdered chicken or beef bouillon, and nori for fish flavour)
6 cups broth for cooking (can add sliced onion and soy sauce for extra flavor)

Directions:

1. Mix flour and spices.

2. In a measure cup, add soy sauce to the 3/4 cup broth.

3. Add liquid to dry. Stir till it comes together.( Add some of the broth 1 teaspoon at a time if you need to.)

4. Now put your large pot of broth on to boil. When that’s taken care of, knead your ball of rubbery stuff for 10-15 min.  Let rest for 5, then knead a few times more. Now make sure the broth on the stove is just simmering. A full boil will ruin the seitan.

5. Cut pieces off the dough and do your best to stretch into thin patty-like cutlet shapes,...thinner is better.

6. Drop the cutlets into the broth and simmer away for an hour or two..then let the broth cool on its own.

7. You can keep the seitan in its broth in the fridge for about 5 days, or freeze it.  This can also be wizzed in a blender to make a ground meat substance.

Serves: 5-8 cutlets

Preparation time: 2 hours

I made this and cut my patties into strips and sauteed it with onions and tomatoes for soft tacos. Taste and feel just like beef or pork tacos.

Thumbs Up This was my first time making anything like this and it turned out great. It took a little while to make but it was easy and well worth it. I put these into Italian beef sandwiches with it and it could not have been any better. I'm going to make a bigger batch next time and freeze some because one recipe used it all up.

This seitan was indeed easy. I have to try others to see if it's the easiest, but considering my last two batches of seitan failed years ago and this one worked so well, my faith in seitanism is renewed. After boiling, I cut the strips into smaller chunks and fried them into a stir fry. While these are good and frying, splash in some soy sauce to sizzle in more flavour. Next time I'm going to put some liquid smoke in and see if I can't make a more teriyaki type stir fry. Thanks!

This was my first try making home made seitan.  The taste and texture was great, although it did not brown up as much as I hoped...I'll continue playing around with the recipe.  Thanks for a new staple!

I don't know why saitan isn't as popular as the other meat replacers!  Smiley
personally I really like it.. This recipe was superb, really easy and high quality.
I will definately cook it again .. and
I recommend it to any one that gets tired of soy based meats. (like me..)
