Garlic Cheese Biscuits

Ingredients (use vegan versions):

    3 cup unbleached all purpose flour(whole wheat can be used if desired)
    1 1/2 tablespoon baking Powder
    3/4 teaspoon baking soda
    1/2 teaspoon salt
    5 tablespoons vegan margarine(Earth Balance works best)
    3-5 oz began cheese, Shredded(Follow Your Heart worked really well for me)
    1 1/4 cup plain soymilk w/ 1 tablespoon vinegar added
    3/4 teaspoon garlic powder

Directions:

Preheat the oven to 425 degrees. Sift the flour, baking powder, baking soda, and salt together in a large mixing bowl. Add 3 tablespoons of the margarine and cut it into the mixture, until the mixture is somewhat "crumbly".

Shred cheese either using a food processor or cheese grater. Add cheese, sour milk, and 1/4 teaspoon garlic powder and mix until a ball of dough forms. Let the dough sit for about 5 minutes. Drop onto a greased cookie sheet into balls of about 2 inches in diameter, be sure to not lay them too close together.

Bake at 425 for about 14 minutes, they don't brown too much on the tops but keep a close eye on the bottoms during the last few minutes of baking. Meanwhile, melt the remainder of the margarine(2 Tbsp), and add the rest of the garlic(1/2 tsp) to the melted margarine.

As soon as the biscuits come out of the oven, brush the garlic butter mixture onto the tops of all the biscuits. Serve hot, goes good on the side of pretty much anything!!

Serves: 12

These are good!  Even without the cheese, they are great if you want to throw together some quick and easy biscuits.

It was very good. My boyfriend and I enjoyed it very much but we're salt fiends so we might add a bit more salt next time. :] We'll also try using other herbs too.

These were the perfect accompaniment to 3 Bell Pepper Chili. I made them as called for & they turned out great. I will probably add a little bit more salt next time though.

So I totally winged it last night with these...halved the recipe, but couldn't find my tablespoon anywhere, so I just guessed with my measurements (which I've learned the hard way doesn't always work when baking)...but they turned out great!  I should have used more garlic, but I still gobbled them up.  I also think I left them in the oven a lot longer than recommended.  These will definitely become a staple with chili!  Thanks!
