Brussels Sprouts and Broccoli

Ingredients (use vegan versions):

    Brussels sprouts
    broccoli
    garlic cloves, minced
    olive oil
    lemon juice
    dill
    salt
    black pepper

Directions:

I never measure the ingredients when I make this dish but just eyeball the amounts instead. But no fear, you can't screw up this recipe.

Use approximately equal proportions of Brussels sprouts and broccoli. Cut the Brussels sprouts in half and chop the broccoli into bit sized pieces. In a mixing bowl, toss the veggies and however much garlic your palate desires with enough olive oil to lightly coat the veggies. Next, mix in plenty of lemon juice. Season with dill, salt and pepper.

Transfer everything into a baking dish that is large enough so that the veggies are in a single or thin  layer.

Bake at 400 degrees for about 30-40 minutes, or until the veggies have browned and are a bit crispy on the outside but tender on the inside. Turn the veggies occasionally to evenly brown everything.

These go great alongside a wild rice blend cooked in vegetable broth.

Made this last night. I didnt cook the veggies as long so they were not so soft but still tasted great. I love dill in ANYTHING.
