Delicious and Simple Garlic Lovers' Red Sauce!

Ingredients (use vegan versions):

2 Tablespoons extra virgin olive oil
    1 small onion, diced
3-4 large cloves garlic (depending on how much you can handle!)
    10-12 ounces tomato sauce
    lots of basil
1-2 tablespoons brown sugar, to taste
    cornstarch (optional)

Directions:

Either smash or mince the garlic, set aside.

Heat the oil in a medium sauce pan.

Add the onion, cook until just transparent, then add garlic. Stir frequently, until the garlic starts to turn a golden color, then add tomato sauce.

Boil, then turn temperature to low, cover, and allow to simmer.

I like my sauce to be thin. If you like it thick, take a bit of water, (maybe 1/8th of a cup or so) and add a couple teaspoons of cornstarch and stir until it is all dissolved. Stir into sauce.

Add basil, however much you like. Then stir in brown sugar last. (Between the onion, garlic, and tomato, this sauce tastes rather salty. The sugar balances out the flavors, and brings about a nice, deep reddish color).

You can serve immediately, or, if you have time, cover and allow to simmer for however long you'd like! This really gets all the delicious favors out.

Note: Tomato paste is very strong. If you are using tomato paste, you may want to increase the garlic, basil, and brown sugar.

Serves: 2

Preparation time: 15 minutes

Wow! Who would've thopught such a simple sauce recipe could be so good?! I'm Italian- I make freat auce- but I'd run out of my usual big-batch sauce and didn't feel like making it just before dinner- so I gave this a try, and it was wonderful! Very unique; flaqvordul and sweet. I will be making this on a regular basis as an alternative to my regular sauce! I didn't even have fresh garlic tonight- so I had to use garlic powder- and it STILL came out great. Can't wait to try it with fresh garlic, so I can really load it up! The only thjing I added was some crushed red pepper. Delic!!

This sauce was perfect.  I vow to never eat spaghetti sauce from a can again!

This recipe is so simple and easy, yet tastes so divine and fancy.  I added a can of drained diced tomatoes and tons of fresh basil.  Gosh, it was good.

This is very close to the tomato sauce that I usually make, but I added the brown sugar! I like to change it up each time..and this time I added green pepper, mushrooms, 4 garlic cloves, one onion, no-chicken broth, fire roasted tomatoes, some ketchup, s, p, basil, cayenne, brown sugar, and balsamic vinegar.  smile

This was so easy to make.  I only had half of the tomato sauce needed for the recipe so I added a bit of water to thin it a little and I omitted the sugar.  I didn't have basil so I used dried oregano instead and the sauce was so delicious. Thanks for recipe!

I made this for the vegetarian option at work today (I work as a cook at a nursery) and the children ate it ALL! They loved it - I didn't put the sugar in and I added some chopped veggie sausage, topped it all off with cheese. I will have to try this for myself (sans cheese, of course!)

Loved this recipe.  Very easy to make and tasty, too.  But next time I will omit the sugar.   I pan-fried some crumbled tofu before adding the diced onion.  I also added pepper.  Thanks!
