Southern Okra and Tomatoes

What you need: 

1 lb fresh okra
1 can diced tomatoes
1 cup vegan "chicken" broth
2 cloves garlic, sliced thin
2 leek or shallots, sliced thin
1/2-1 teaspoon red pepper flakes
1 Tablespoon Old Bay or other cajun-style seasoning
salt & pepper
1/2 Tablespoon oregano
cooked white rice

What you do: 

Cut okra into 1/2" rounds, throwing away tops & tips. I don't recommend using frozen okra, it gets too gooey and it's just not the same.
Saute the garlic, leek, and red pepper flakes in a small bit of oil, and right before it starts to brown, add the can of tomatoes. Add the broth, oregano, old bay, and then the okra. Mix well, cover, and simmer over medium for about 10 minutes.
Spoon over rice when done.
This recipe is pretty spicy, and the spice measurements are approximations. If you don't really like spicy foods, omit the red pepper flakes.

This was delicious and easy!
I added some Bragg's and a few jalapenos.
