Amazing Roasted Mashers!

Ingredients (use vegan versions):

    1 large red potato
    1 large Russet or baking potato
    2 large sweet potatoes
    1 large Yukon gold
    1 medium leek
    1/2 small red onion
    salt- to taste
    pepper-to taste
    1-2 Tablespoon olive oil
    your favorite gravy, i really like the shitake gravy made by the folks who make "chreese"

Directions:

Scrub the potatoes well and peel only the sweets if you can. chop into a 1.5'' dice and toss into a roasting pan.

Chop the red onion into thin 1/2 '' long slices and add into the pan.

Trim the very tip of the root from the leek, and remove the top. (keep the white and pale green parts only). look down the center and cut on the ellipse so its symmetrical.

Swish them in water to remove the inner dirt and debris and slice into 1/2 inch wide slices. add to the roasting pan.

Toss everything well with enough olive oil to coat. start roasting at 425 for 15 minutes and turn down to 350 until potatoes are tender, the onions translucent, and the leeks are crispy.

Serve as is with gravy, or mash up!

Serves: 4-6

I really really like yams and sweet potatoes and this was a fun way to get my family to eat them other than in a pie! They think it's weird to mix all kinds of potatoes but the first time I had them mixed was in a bag of chips (or crisps) and I thought duh make my own when I came across this recipe.  I've posted two pictures the second is with the mashers on top of a bowl of chili. They help to sort of bring the heat down from the chili with just a hint of sweetness from the sweat potato's. Thanks a lot for this recipe!

The only suggestion I have for those that try this is that you have to eat them right away before they get cold. Or turn the oven to warm or leave them in but turn the oven off, until you are ready to eat them.
