Amazing Roasted Mashers!Ingredients (use vegan versions): 1 large red potato
1 large Russet or baking potato
2 large sweet potatoes
1 large Yukon gold
1 medium leek
1/2 small red onion
salt- to taste
pepper-to taste
1-2 Tablespoon olive oil
your favorite gravy, i really like the shitake gravy made by the folks who make "chreese"
Directions:Scrub the potatoes well and peel only the sweets if you can. chop into a 1.5'' dice and toss into a roasting pan.
Chop the red onion into thin 1/2 '' long slices and add into the pan.
Trim the very tip of the root from the leek, and remove the top. (keep the white and pale green parts only). look down the center and cut on the ellipse so its symmetrical.
Swish them in water to remove the inner dirt and debris and slice into 1/2 inch wide slices. add to the roasting pan.
Toss everything well with enough olive oil to coat. start roasting at 425 for 15 minutes and turn down to 350 until potatoes are tender, the onions translucent, and the leeks are crispy.
Serve as is with gravy, or mash up!
