Avocado Tomato SaladIngredients (use vegan versions): 4 tomatoes
3 avocados
1 small red or purple onion
olive oil
balsamic vinegar
all purpose Greek seasoning
Directions:-Cut tomatoes, avocados, & onions into chunks. (You'll likely want to cut the onion into smaller pieces or dice it.)
-Mix oil, vinegar, & Greek seasoning; pour over tomatoes, avocados, and onion. Give it a gentle stir or finger toss.
-Serve.
*Probably already obvious... but this is a very adaptable recipe. You can make as little or as much as you want and alter the taste by increasing or decreasing the ratio of ingredients.
Serves: ~4-6?
Preparation time: About as fast as you can dice.
