Carrots Elegante

Ingredients (use vegan versions):

    1 pound (.5 kg) carrots, thinly sliced
    1/4 cup golden raisins
    1/4 cup vegan margarine
    3 tablespoons liquid sweetener (e.g. agave nectar, maple syrup, etc.)
    1 tablespoon lemon juice
    1/4 teaspoon ground ginger
    1/4 cup sliced almonds

Directions:

This recipe comes from My Aunt Nancy.  When I moved into my first apartment, my aunt gave me a recipe book with some of her signature dishes. She said to serve this when I wanted to impress my guests!

1. Cook carrots, covered, in 1/2" boiling water for 8 minutes, drain.

2. Put carrots into a 1-quart baking dish.

3. Stir in raisins, margarine, sweetener, lemon juice, and ginger.

4. Bake uncovered for 35 minutes.

5. Spoon into serving dish, sprinkle with almonds.

Serves: 4

Preparation time: 10 min, 35 min cook time

This is an amazing dish!  I made it for myself and loved it so much I made it for my family Christmas day.  The carrots and raisins complement each other perfectly to create a lightly sweet, elegant side dish.  I sprinkled the almonds on before cooking so they could toast, stirred the dish after a half hour, then cooked it for an additional half hour.  DELICIOUS- thanks Dink/Aunt Nancy!

This was a nice dish.  I needed some ideas for the gigantic bushel of carrots I have from my garden.
