Carrots EleganteIngredients (use vegan versions): 1 pound (.5 kg) carrots, thinly sliced
1/4 cup golden raisins
1/4 cup vegan margarine
3 tablespoons liquid sweetener (e.g. agave nectar, maple syrup, etc.)
1 tablespoon lemon juice
1/4 teaspoon ground ginger
1/4 cup sliced almonds
Directions:This recipe comes from My Aunt Nancy. When I moved into my first apartment, my aunt gave me a recipe book with some of her signature dishes. She said to serve this when I wanted to impress my guests!
1. Cook carrots, covered, in 1/2" boiling water for 8 minutes, drain.
2. Put carrots into a 1-quart baking dish.
3. Stir in raisins, margarine, sweetener, lemon juice, and ginger.
4. Bake uncovered for 35 minutes.
5. Spoon into serving dish, sprinkle with almonds.
Serves: 4
