Award Winning Cocoa Apple Cake

Ingredients (use vegan versions):

    1/2 cup applesauce
    1 NRG egg replacer, prepared as directed
    1 3/4 cup sugar (I start out using a bit less, and add more if needed)
    1 cup vegan margarine
    3/4 cup soymilk soured w/ 1 Tablespoon apple cider vinegar
    2 1/2 cup flour
    2 Tablespoons cocoa
    1 Tablespoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon allspice (optional, adds a strong spice)
    1/2 teaspoon salt
    1 1/2 teaspoon vanilla extract
    1/2 cup chocolate bits
    2 cups peeled, cored, chopped apples

Directions:

Preheat oven to 325 degrees F.

Prepare the NRG egg replacer, as directed and whisk well. Set aside.  Sour the milk, by adding the vinegar and set aside.

Grease and flour a bundt pan or tube pan.

Sift together dry ingredients  (flour, cocoa, soda, spices)

Whip well, until fluffy, vegan margarine and sugar. Add the applesauce, vanilla, NRG and soymilk.

Add dry ingredients to wet. Batter should be light and fluffy.  Fold in chopped apples, chocolate bits, nuts (if desired).

Spoon evenly into pan.  Bake for about 70 mins.

When cooled, add a topping, if desired.  Melted chocolate drizzled over top.  or Apple cider glaze...confectioner's sugar thinned out w/ apple cider and drizzled over top. - OR -plain ole powdered sugar dusted over top.

I made this as a remembrance to LA.  I wasn't expecting it to be the best chocolate cake recipe EVAH!!! 

This cake was dense and moist.  I let it sit out overnight, so that might be why the outside was a tad drier.  I hope that's the way it generally turns out, because it would make travel and cutting that much easier.

I had a partially used bag of chocolate chips and I added the rest of the bag which was probably closer to one cup of chocolate chips, so maybe that's why it tasted chocolately.  I didn't taste the apples at all, they just added moisture.  I made the confectioners' sugar and apple cider drizzle for the top, but forgot to sift the sugar first, so it came out lumpy.  Because I can't taste that apples in the cake, the next time I'd melt chocolate chips with a little butter and drizzle that on top.

This is possibly the best cake I've ever eaten.  Ever.
