Creamy "Al-faux-do" Sauce

Ingredients (use vegan versions):

    1 can coconut milk
    1 clove garlic, finely minced
    2-3 Tablespoons nutritional yeast (or more if desired)
    1 Tablespoons flour
    1/3 cup water
    1-2 Tablespoons soy margarine (or olive oil)
    nutmeg, salt, pepper to taste
    optional: 8-12 sliced button or cremini mushrooms

Directions:

Cook desired pasta until al dente.  This goes well over macaroni noodles as well.

Heat a medium saucepan with the margarine until melted.

Add minced garlic (and optional mushrooms).  Saute until golden brown.

Pour in 1 can of coconut milk.  Stir in nutritional yeast.  Simmer over medium-low heat for 5 minutes.

Mix the flour and water thoroughly.  Pour small amounts slowly into coconut sauce, stirring well.  Add just enough to reach desired consistency.

Add a sprinkle of nutmeg, salt and pepper to taste.

Pour over hot pasta and enjoy!

Serves: 4

1st of all i wanna say this  was AWESOME!!!and thank you!
i did make some small changes.
i cooked the flour in oil seperately than added it to the 1/2 minced onion i had simmering with the cocomilk and spices. i added 1/2 C. soymilk and 1/3 C. N. Yeast. oh and for color i added a little mustard powder and tumeric.

turned out great!

Oh man!! This recipe was just like the stuff that used to be my all time favorite before I was vegan. Eating this took me back to many happy times. Thanks for the awesome recipe! PS adding flour to warm or hot water will help you not to get lumps.  Smiley

This recipe was deliciousss.

I did make some changes though.  Once I had all the ingredients in, I realized it was realllly watery, so I added about 2 tablespoons more yeast and a tablespoon more flour.  I also used soymilk with a bit of sugar instead of coconut milk.  It was AWESOME!  I missed alfredo sauce so much.  Thanks!!

This was definitely a delicious recipe and it suits its name perfectly. I found that the sauce was too runny, so I took a previous posters' advice and added an extra tablespoon each of flour and nutritional yeast and it turned out perfectly. I topped the whole thing off with chives, though next time I'll try adding 1/2 an onion and a dash of cayenne pepper as well for that extra zip.

This stuff is so yummy! I added a little more flour than suggested and it made it the perfect consistency.
It has a coconutty flavor but it's really delicious, and the nutritional yeast hides most it. Super yummy for left overs too!

I threw in some Butler soy curls and it was exactly like chicken alfredo, yum yum yum.

This turned out really well. The coconut flavor was apparent to me but my boyfriend didn't even notice it, he said it was almost like the real thing. I added broccoli to the pasta after I drained it and let it steam for a minute. Topped it off with some crushed red pepper and an herb salad on the side. Thanks I will be making this one again.
