Oh my god!! I just made this FINALLY and you MUST make this sammie NOW! It reminds me so much of a grilled cheese but kicked up a gazillion notches. I made this on my grill pan which just added a really yummy smokey flavor in the background.  I used veganaise, dijon mustard, and regular yellow mustard, and topped with tomato slices and red onion.  So good and quick......Pictures to follow...right after I go make another one!  Wink

ahhh these were soooo good! I came home late tonight, so didn't feel like making anything but this was so easy and didn't require anything new. I made it in 5 minutes (although I left the stove and burnt the bread Evil) But even still it was so goood. I wish my stomach was infinite, and then I would just keep eating these. Smitten

This was so simple and a big hit! My stove top and I don't always get along so I used an electric griddle instead. I made mine with potato bread, veganaise, mustard, a sprinkling of nutritional yeast and ground flax seed, alfalfa sprouts, red onion slices and tomatoes. I wish I would have added some fresh ground black pepper. I did mashed and sliced avocado. It grilled up perfectly and tasted great. Thanks for sharing this simple recipe! It is sure to be a regular at my place from here on.  Thumbs Up

This was very good, I made it like a grilled cheese, except I used avocado and tomato instead of cheese, I also put vegan mayo and mustard on it too, which gave it some zip.  This would be awesome with some tomato soup  on the side.

"mmm....m! Yummy goodness!"  "I could just eat 100 sandwiches just like this!" My six year old son's words.

I bought avocados at the store today just to try this recipe. I am so glad I did. I pretty much did as the recipe suggested - just added a spinkle of salt and buttered just one side of the bread. And Veganaise on the inside of course.

Oh, ok...my son, Jayden, just told me that this was the sandwich of his dreams.

I was thinking that some alfalfa sprouts would really add some crunch to this sandwich. Totally going to make it again. Smitten

Delicious, quick, and easy!  Tonight, I used sourdough bread, Earth Balance margarine, mashed seasoned avocado, sliced grape tomatoes, salt, pepper, vegenaise, and spicy brown mustard.  These are a great option when you're super hungry and need something fast to throw together.

wow, it sounds so simple but it's actually that good. I made mine with tomato, a few slices of salami, and spicy chipotle humus!

so good! I made it with vegan butter and veganaise on Daves Killer Bread. mmmm sooo yummy. I think next time I will try it on sourdough that sounds like it would be super good. I also used maters. I forgot mustard but I'm not sure it needs it?

I can live off of these. My favorite way to make it is to mash the avocado with some lime, cilantro, salt and pepper; with a little bit of mustard and tomatoes, and only a little butter on the outside. Mmmm.
