I love Grilled Vegan Cheese sandwiches, too,...but
I really love Avocado.  In Mexico it's called, "the poor man's butter".

First...grill/sautee some onion slices & slices of larger mushroom in Earth Balance in a fry pan 'til golden brown, drain, ...set aside.
I make my grilled sammiches like this:
Inside the bread (I like whole grain oat nut)- one slice has ground mustard-the kind with those tiny little ball bearings of mustard seed.
The other slice - Vegenaise mayo(a nice slathering of it!), then I start to STACK:

~2 slices Vegan/Veggie Cheddar Cheez, thinly sliced tomato, thinly sliced avocado, sauteed mushroom, sauteed onions & top with the other slice of bread. Spread a little Earth Balance on the top slice of bread, flip over and start to brown it in a barely oiled fry pan(that's been on medium heat for a bit that makes it hot enough to begin browning.  Flip over after some comfy seconds, then Earth Balance the other side.  Grill bread 'til it's a warm golden brown.   Place sammich on plate, carefully slice in 2, diagonally.  I like to dip this Goddesspiece in ketsup/catchup/catsup/ketchup.
It is a divine experience. OOooooooommmmmmm.

I sometimes eat avocado with thin slices of apple on bread, or sometimes just dip apple slices in scooped out avo. It is so yummy! I'll try this too. I'm sure i'll love it. Thumbs Up

Very very yummy! I was looking for a simple way to use up an avocado, and I'd never had a grilled avo sammie before! I used whole wheat bread, stone ground brown mustard, tomato slices, and the avocado!

Had this for lunch yesterday and it was good. I didn't have any mayo so didn't use that and I added some cooked sliced onions(I love onions) and it was great. I think I would taste amazing with some pico de gallo sauce on it. Thanks for the quick and east recipe.

Yumm yumm. I love ANYTHING with avocados!

I added tomato slices and a sprinkle of garlic powder! YUMMMM.

I also didnt have any butter so I sprayed the pan with cooking spray, worked perfectly. My new favorite quick-e sandwich!

Ok so I was thinking... avocado, butter type spread, and bread I have those things, why not make it. I was not expecting it to be so good. I had mine with veggie noodle soup. Great new fast lunch or dinner. Thanks

This recipe is relevant to my interests.


I just made it and it's fucking awesome. I used vegenaise, horseradish mustard, a fatty slice of tomato, some red onion and a tiny squeeze of lime juice. Delicious!

I am eating this right now! They are very good, but I burnt mine on one side. Sad

Hard to believe the avocado can be improved upon. But it can. In this recipe.

I added red onion and chipotle peppers. Delicious! Delicious! Delicious!

Yep, this was great for dinner tonight.  After one bite, I wanted to take away my daughter's half of the sandwich so I could eat it all.  Next time I think I'll just give her the avocados to eat and make the sandwich for myself.  Evil

So, I thought this would probably be the best way to try out avocado, since I have never had it alone (only had it in guacamole like.. 6 years ago). I don't know what it is, but avocado and I just don't get along. I don't really like the taste of it, by itself. However, when I tried this recipe (with avocado, bread and mustard only), it was really really good Smiley This is a great way to enjoy avocado, though I can assure you. I won't be eating it by its lonesome anytime soon -Laughs-

Mmmm! These were so yummy! I had sauteed some onions for another dish I was making, so I put them on my sandwich with the avocado. YUM! I also mashed up the avocado. Probably didn't change the taste any Wink but the kids liked it better. Big hit and will definitely make again soon! Very easy!
