Grilled Avocado Sandwich

Ingredients (use vegan versions):

    1 large, ripe avocado, preferably Hass or another "fatty" one
    4 slices of sandwich bread (whatever kind you like)
    vegan "buttery" spread
    optional: whole grain mustard, vegan mayo

Directions:

Cut avocado in half and remove pit.  Slice into thin wedges. Set aside.

Spread the buttery spread on one side of all the bread slices. Place one slice, buttery side down, in a preheated frying pan over medium-low heat. If you want to add vegan mayo, mustard, or other "dressings" now is the time! Otherwise, lay the avocado slices from one half of the avocado on the bread, covering well.  Place another slice of bread, buttered side up, on top. Let cook 3-5 minutes, or until the bottom is golden to your liking. Carefully flip the sandwich over and grill the other side 3-5 minutes.  Repeat the above to make the second sandwich.

This is best when you have a really fatty, good avocado (like Hass). If you use a Florida or other "low fat" or "wet" avocado the flavor is still there but it isn't as good in my opinion. This goes well with soup.

Makes: 2 servings, Preparation time: 10 minutes, Cooking time: 10 minutes

Sadly I didn't have any vegan butter on hand. Forgot to get more. So I ate the sandwich as a cold one.  found it very appealing very good . ~-}

I actually like this more than the real grilled cheese sandwhich.  I added mustard, tomato slices, and veganaise.  It was so good!  I can't wait to leave work and eat another one  2Funny

Awesome, it was so simple, but better than any grilled cheese sandwich I've had before. And believe me before I went vegan, I was a huge cheese freak. I also add some sun-dried tomatoes sometimes.

Yummmmmmm. I've been hungry for this for a while now. I used wheat bread, some veganaise, and horseradish mustard. My husband had regular mustard. So good!

I eat one similiar to this, but I just put the bread in the toaster, then mash the avocado on it and add red onion and bean sprouts

I made this recipe for my mom and I for lunch and it was great. I didn't have any mustard or vegan mayo so I used hummus which turned out really well and I liked that it added protein. I also added tomato slices.

Oh man. We just had these (mine with PLENTY of veganaise), avocado, and tomato....on our favorite sourdough. It was SO GOOD. Oh man.

I have had this in my recipe box for a while. I tried it today with whole grain bread, avocado, thin tomato, and mustard. It was good except that next time I won't butter up the outside of the bread. It wasn't necessary for me, and I would prefer it without all of that margarine taste. Other than that, very good, will make again!

 Cheesy Cheesy Cheesy see this is how cray good this sandwich is.. And it is true you will never miss a grilled cheese again.. this is my new "i have NO time to make anything" meal.. i put some slices of Follow your heart "cheese" on it.. WOW.. that's all i can really say.. loved it thank you so much!

Yum! I just made these sandwiches on whole wheat and they're delicious. I love avocado so I just added some salt, and its great. Next time I'll probably have some tomato on it. Awesome recipe!
