Cornish Pasties

Ingredients (use vegan versions):

    1/2 cup cold water
    2 cup flour (I always used white, but feel free to try something else)
    2/3 cup vegetable shortening or solid fat of your choice
    1 teaspoon salt
    --- For the filling ---
    1/2 teaspoon pepper
    1/2 teaspoon salt
    3 cups diced potatoes
    1/2 cup diced carrots
    1/2 cup diced onions
    1 cup vegan ground beef (optional)

Directions:

Mix dough (cold water, flour, fat and salt); roll into 4 balls and chill for 1 hour. This part of the recipe can be done the night before, if you prefer.

Mix filling and optional ground.

Roll dough into 8" circles. Fill and seal in pockets. Bake at 400 degrees F for 25 minutes, until golden brown.

These are easy to make, and very delicious. I personally prefer them without the imitation meat, but both versions are quite good.

Serves: 4

Preparation time: 1 hour 30 minutes

OKay so I was a little bit of a cheater and used prefab dough, but whatevs it was on sale! I also added this stuff that I found at my local SunSpot Natural food store, its a roast filled with stuffing that I swear tastes/looks like real meat! I cut that up into slices instead of the "ground beef". Its what we call in the food eating business "reeeeaaaallly good"

I would think butter fits that description... u might want to use stick butter... EB has some it seems to work better for baking.
