Easy Thai Green CurryIngredients (use vegan versions): 2-3 cups cut green beans
1/2 block firm tofu, cubed
1 Tablespoon green curry paste
3 cloves garlic
1 can unsweetened coconut milk
rice
Directions:Fry curry paste and garlic in a little bit of oil over medium heat in a large skillet for about 3 minutes, or until garlic & paste become very fragrant.
Add coconut milk, tofu, and green beans.
Simmer for about 5 to 10 minutes, to allow tofu to soak up the flavors.
Spoon over basmati rice.
Serves: 4
